the treatment for type 1 diabetes used to be near starvation!!! Well good news!! It isn't any more.
Your boy friend can eat nearly anything he wants. He can have loads more carbs than the type 2 peoples can because the only thing in common between type 1 and type 2 is the name!!
You need to both be eating a balanced menu of foods. I am thinking probably 40% carbohydrates, 30% protein, and 30%fats.
a good balanced dinner for instance would be 3 to 4 oz cooked meat, any good potato dish but half cup serving, any green veges, any red veges, any orange veges. a nice salad with dressing. And Fruit bowl for dessert, maybe with whipped cream??
What I am saying is to go easy on the desserts, but follow the USDA food pyramid with the bottom tier lopped off.
Type 1 peoples must inject insulin to cover all carbohydrates, so go to the library and get some diet books that give the carbohydrate counts. Study the books and both of you learn to count carbs. The doctor will guide about how much insulin to cover like 15 grams of carbos.

a type 1 diabetic can eat basically anything they want...as long as they watch their portions and dont overload on carbs all the time (when i say overload i mean dont pig out on 8+ carbs all the time at meals)...diabetics watch the amount of carbohydrates they eat because that is what makes the blood sugar rise.

You can pick up a Diabetic cook book from any bookstore. You will find that there is sugar in most foods, so tempering his intake with exercise will help. (I have a friend who is diabetic and he eats everything - then regrets it!)
