I don't remember where I got the recipe, but I found something that said to press out the water, cut the tofu into 1 inch chunks and marinate it oyster sauce. After letting it sit there for about 20 minutes, spread the cubes out on a cookie sheet, and bake in the oven at about 375, until the outside gets a hard crust. Then, use it in your stir fry.

I also had found one that called for it to be used in lasagna. It took the place of meat and ricotta, but I still mixed in some ricotta. It was crumbled up, after the pressing, and then I layered it in with the noodles, sauce and veggies. Topped it off with the vegetarian version of mozzerella, and baked it off. It looked a little strange, but sure tasted good. I almost didn't miss the meat..... almost. lol

Tofu has no flavor, so it absorbs the flavors of foods you cook it with. To help aid absorption, you want to drain the water from your tofu, freeze it for at least 24 hours, press it for about half-an-hour before you cook it (defrost for a day or two in the fridge), and then marinate it. You can, however, store tofu in your fridge for several months, so keep a supply handy.

I personally cutting it into small pieces and then pricking it before marinating like i would meat results in some flavor getting into the tofu pieces. After that you can cook it as you please. Just make sure the marinate compliments the final dish.

Good luck

Try marinating it in a marinade you like a lot. It's a great way to add unique flavor to it.
