I have heard that most of the niacin and thiamine are in the skin but I'm not sure if that's true of not. Actually, potatoes are very nutrient rich and even contains vitamin A, B6, C, protein, iron and calcium. However, many people make them unhealthy by frying or loading excessive amounts of salt, butter, or sour cream. Starchy foods aren't necessarily bad for you but some of us eat too much of it and get fat as a result.

Potato skins are one of those things people argue over. That means nobody has a clear or supported answer
Some claim that vitamins are hidden there, others point out that claim is doubtful and that you would need to eat tons of skins every week for it to matter.
Some claim that toxins gather there. They are right and families have died from eating potato skins.
But it is only from potatoes exposed to light and turning green. (solanine)

while the inside is mostly starch!

potato skins (and this also applies to many other skins or peelings such as apples) have more fiber in them then the inside of the fruit or vegetable.

Generally speaking, the skin of a fruit or veggie has most of the nutrients.

the skin got some good nutes, but i never eat it because i don't trust the soil it grows in, i mean, i can't wash it enough, so i don't eat it.
