how about heads of lettuce, ears of corn or finger foods at the party?

It depends. Vegetarians do not want to harm a living creature. Therefore, if the potato is blind, then it is okay, but if the potato can see out of it's eyes then it is not.

Oh, har-de-har. A potato is a plant, right? So a veg*an can eat it. In fact, the only things with eyes I eat are potatoes. The only thing with a head I eat is lettuce, and the only thing with ears I eat is corn.
