I've been noticing the latter more and more recently and I was wondering why people do that. It's not like it's a "bad" word.

This is a serious question.

Veg*n is short for vegetarian.

Veg*n is not short of vegan, because it is the same number of letters.

I think the correct way to show that you are leaving out letters would be

Veg'n

I also thing people forget how to spell Vegetarian.

Veg*an or veg*n is shorthand for "vegetarian or vegan". It's a lot easier to type the five or six characters than to keep typing "vegetarian or vegan" over and over.

Veg*n is shorthand for "vegetarian and/or vegan." The * is a wild character that can substitute for the a in vegan OR the etaria in vegetarian. If you're referring to both, it's just faster and easier to type.
