Bernard Shaw was a well-known vegetarian and he did have some wonderful quotes about it, but I don't feel like looking for them right now; too lazy. I'm sure can find something by putting "Bernard Shaw vegetarian" on a search engine.
I'm not sure what you mean by "top vegetarian"--in terms of people who are famous? All of them are "tops" as far as I'm concerned.
As far as vegetarian celebrities go, my personal favorites are Mohandas Gandhi, Isaac Singer and Albert Schweitzer (not sure if I'm spelling his name correctly).
Paul McCartney is pretty cool too. However, I would have to say his music has become pretty sappy ever since he didn't have John Lennon to bounce off ideas with (my opinion, but a lot of people would agree).
John Tesh is supposed to be vegetarian, I can't stand his music but I have seen him on talk shows and I thought he was very witty and funny. Somebody said "Your music sucks worse than Michael Bolton and Kenny G put together." His answer was "That's impossible, nothing could suck that much."
Some alleged vegetarian celebrities that I find totally annoying are Madonna, Michael Jackson and Michael Bolton.

Shaw wrote a poem which begins "We are the living graves of murdered beasts..." He was very outspoken about his vegetarianism, and claimed to have outlived all the drs. who had told him he 'needed' to eat meat.
Other reknown vegetarians include Leonardo da Vinci, Einstein, Plato, James the Just & Pythagoras. Contemporary famous vegetarians include Rob Zombie, Christian Bale and many others. 90-something fitness expert Jack LaLanne eats a 'mostly' vegetarian diet.
