Pineapple Upside-Down Biscuits Recipe
1 (10-ounce) can crushed pineapple
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter, at room temperature
10 maraschino cherries
1 (12-ounce) package refrigerated buttermilk biscuits (10 count)
Preheat the oven to 400 degrees F.
Grease 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later. Combine the pineapple, sugar, and butter, and mix well. Divide the pineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit. Bake for 12 to 15 minutes, or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

Here's an elegant brunch strata. Start with 2 loaves of a crusty bread. Slice it into 1 inch squares two or three days before the brunch. Let the bread sit out and harden up for as long as possible. On the night before your brunch, do the following:
1. Slice or coarsely chop 2 pounds of mushrooms and saute them with a yellow onion in a 1/2 stick of butter. After onions become transluscent (about 10 minutes) Add 3 TBSP of flour and stir to moisten all the flour. Let this cook about 3 minutes so that the flour cooks. Add 2 cups of 2% milk. Bring to a simmer and let cool slightly. Add a cup of dry white wine (can even be done with champagne).
2. Spread the bread cubes in a buttered roasting pan and top with 1-1/2 pounds bacon cooked to crisp, broken up and drained.
3. Break 1 dozen eggs into a bowl and beat with 1 cup of 1/2 and 1/2.
4. Pour the mushroom mixture on top of the bread and then do the same with the eggs. Finally, top all with your favorite cheese(s). I use Gruyere, Asiago, White Cheddar and Gouda. This mixture is very rich but worth it. Cover with foil and leave in refrigerator over night. Bake @ 350 for 45 to 60 minutes on the day of your brunch. This could be served with a very nice crudite of vegetables with dipping sauce and a mixture of hot and cold canapes. To drink, mimosas are nice, but I like to mix a container of frozen cranberry juice with a bottle of Ginger Ale. Prepare several ice rings with or without fruit. One hour before guests arrive, melt a half gallon on rainbow sherbet in the punch bowl. Add the cranberry juice concentrate and soda along with an ice ring. Keep an eye on it and replenish ingredients throughout the brunch. Enjoy!

you didn't mention how large your house is in square feet, but a buffet table arranged with a couple of quiche, perhaps one artichoke and ham, and one with the traditional cheddar and bacon. Then perhaps some stuffed pablano peppers, wrapped chicken livers with bacon and water chestnuts. Grapes, raw veggies with two dips, one a horseradish style, the other a ranch dressing, and you could always put out some finger sandwiches, which would be the only thing you would have to prepare that day, everything else could be baked and then warmed that day. Congratulations on your first home together!!! Here are some items I have served for brunch in the past that went over well:
1. Mimosas, good coffee, tea, and plenty of orange juice
2. Strawberry, banana nut, and zuchini breads with sweet butter.
3. Hashbrown casserole with ground sausage, frozen hashbrowns, eggs and cheese
4. Baked ham with small orange muffins and butter for mini sandwiches
5. Frittata using marinated artichoke hearts, diced chilis, eggs, and lots of cheese
6. Bacon and cheese quiche; carmelized onion and mushroom quiche; artichoke and green chili quiche
7. Fresh fruit platter with pineapple, melon, star fruit, kiwi, strawberries and a honey yogurt dip
8. Coffee cakes

Croissants and jam
A couple big hashbrown casseroles
Fruits and cheese
Any other assorted pastries
(Gotta have the savory foods along with sweets for brunch)
And bloody marys and mimosas seem to be the norm around here for brunch. But of course coffee, tea, soda, and water options.

A fruit plate or fruit salad.
A nice green salad with field greens
Different kinds of fritattas (like a quiche, but made in 9x12 casseroles and easier) OR hire a guy to make omelettes to order
Country ham with honey mustard sauce on the side or a honey baked ham
Biscuits and mini bagels
Smoked salmon, capers, onions and cream cheese (for the bagels)
Some kind of sweet rolls or danish (mini sized)
Coffee, tea, oj and champagne or bloody marys or both

A buffet will give you flexibility about where people sit. With 25 people, I'm sure you don't want to be tied to the kitchen cooking on the spot...
- A whole poached salmon (cold) with dill sauce.
- Potatoes roasted with onion and red bell pepper
- Spinach and mushroom quiche (keep it vegetarian)
- spiral sliced ham
- southern-style biscuits (eat with the ham or on their own)
- Fruit salad
- Fresh squeezed OJ. Champagne for mimosas. Sparkling apple cider.
- Apple crisp for dessert!!!!!
None of this stuff has to stay piping hot to be enjoyable. People can keep grazing throughout the party.

Beef and or Vegetable Soup, Bean Dip, Cheese Dip
My mom fixes sandwiches, usually pimento cheese and cuts the crust off and cuts in to triangles. They seem to be a favorite. Easy to handle, great for kids.
Celery with pimento cheese spread or peanut butter
Some M & M's in a pretty candy dish, candy corn. (fall colors)
Presentation makes it classy - make the food you and your friends like to eat.
Cucumber and watercrest sand wiches maybe classy, but if you and your friends don't like cucumbers....
You'll be wondering what to do with those left overs...

For appetizers, I like to serve
goats cheese with fresh herbs (lemon thyme, other kinds of time) and lemon juice with crackers
Fruit with dip (1 package cream cheese whipped with 1 container fluff - yum)
Entrees -
french toast with bananas foster is delicious
or, baked egg soufles -- you need individual ramekins for that. I make some with cheese and bacon, some with spinach cheese, whatever your guests may like.
sparkling champagne with juice added and orange slices is a good drink.
any zucchini bread is nice with brunch too.
