Raita is an Indian salad usually made with yogurt (sometimes without). The yogurt may be seasoned with cilantro, cumin, mint, cayenne pepper, and other herbs and spices.
Vegetables such as cucumber, tomatoes, carrots, radishes, cabbage and onions are often added. The mixture is served chilled. Raita has a cooling effect on the palate which makes it a good foil for spicy Indian dishes.
ONION RAITA (use red onions, they really taste great!)
Ingredients:
1 cup good quality yoghurt
1/2 cup sour cream
1/2 large red onion, peeled and finely chopped
1 green chilli, chopped finely
1 tsp finely chopped cilantro leaves
1/2 tsp ground cumin
1/8 tsp red chili powder
1/2 tsp salt (to taste)
a squeeze of fresh lemon juice
Method:
Place everything in a bowl and mix well. Serve chilled, with any Indian meal.

Are you looking for a recipe for onion raita? Try this. I normally think of cucumber when making a raita, but I think that Indian recipes are forgiving enough to be able to accommodate different vegetables - bear in mind the relative water content (cucumbers may need salting, and on the other hand I've never heard of a carrot raita) and suitability for eating raw.
2 cups Yogurt
1 big yellow sweet onions
1 Green Chili chopped finely
!/4th cup chopped Cilantro leaves
Salt to taste
Slice the onions lengthwise, Wash under cold water and swish. Drain all water. Wash & dry the cilantro. Chop finely. In a serving bowl beat the yogurt with the salt. Add the onions and chilies with salt. Garnish with cilantro.
Serve cold. Its a great side dish for any rice dish.

The sliced onion is simple, but I imagine alot of work goes into the yoghurt. When I get Indian takeaway, you get get sliced onion and a red sauce and a yellow sauce free. The red one is a sour tomato flavour and the yellow is minty and sweet.
