Vegetable Paella
(can be vegan)*
This vibrant and colourful dish is familiar to anyone who has visited Spain. It should be made with Spanish Valencia rice, but you could use Arborio or rissotto rice instead. Many regional variations exist but rice and saffron are the two ingredients common to all. Don't leave out the saffron or use turmeric instead -- there is no substitute for the real thing!
Serves 4-6
Ingredients
3 tablespoons fruity green olive oil
2 onions, chopped
2 garlic cloves, crushed
1 red pepper, seeded and sliced in rings
1 yellow pepper, seeded and sliced in rings
450g/1lb tomatoes, skinned and chopped
225g/8oz thin green beans, trimmed
450g/1lb peas in their pods, shelled
450g/1lb Valencia or Arborio rice
1 teaspoon paprika
300ml/1/2 pint dry vegetarian white wine
1/2 teaspoon saffron
900ml/11/2 pints boiling vegetable stock
salt and freshly ground black pepper
3 tablespoons chopped parsley
Method
1 Heat the olive oil in a paellera or large shallow frying pan. Fry the onions and garlic gently until soft and golden. Add the peppers and fry for 4~5 minutes. Then add the tomatoes, beans and peas and cook for another 5 minutes.
2 Add the rice and paprika and stir well. Pour in the white wine and bring to the boil. Mix the saffron with the boiling stock and pour into the pan. Reduce the heat a little and simmer for five minutes.
3 Cover the pan with a lid or some foil and place in the bottom of a preheated oven at 180C/ 350F, Gas Mark 4 for 30~40 minutes, until the rice is tender and has absorbed all the stock. Alternatively, simmer on top of the stove in the same way as you would cook a rissotto. Season to taste and stand, covered, for five minutes before serving sprinkled with parsley. Serves four to six.
Mushroom & Cheese Macaroni
Ingredients
400g wholewheat macoroni
60g butter or margarine
2tbs chopped parsley
450g mushrooms
60g grated cheese
Method
1. Cook macaroni according to manufacturer's instructions.
Slice mushrooms and fry in the fat for 8 mins then add the parsley.
Drain macaroni and mushrooms and toss together lightly.
2. Serve sprinkled with grated cheese.

the moosewood restaurant in ithaca, ny puts out some of the best, most comprehensive vegetarian cookbooks in publication. they were also one of the original veg cookbooks to hit the mainstream. i was raised on them- and we didn't live in a vegetarian household- simply a health-conscious one...my father had a double bypass heart surgery when i was small so our family did what you are trying to do- eat well but in a healthier way. they have EXCELLENT ethnic recipes. i own 'sundays at moosewood,' which is all ethnic, with good explanations of ingredients, cultural histories of food, etc. i sincerely recommend the moosewood- either invest in a book or explore their website. as proof- every time i go to the restaurant, i am blown away by their level of quality- really excellent, upscale health food. even my steak and potatoes grandmother always finds something she raves about. best of luck in this endeavor.

veggie pizza--2CANS CRESCENT ROLLS,1 PACKAGE (8-OZ.)cream cheese,1/2cup sour cream,1-tsp.dried dill weed,1/8tsp garlic powder,1/2 cupsmall fresh broccoli florets,1/3 cup cucumbsr slices 1 plum(roma) tomato,seed,chopped,1/4 cup shredded carrot. heat oven to 375, sprarate cans of dough in rectangles.in ungreased pan 15x10x1-inch pan place dough into pan press in bottom and up sides to form crust.bake 13 to 14 minutes or until golden browncool for 30 minutes. in small bowl mix cream cheese,sour cream,garlic powder until smoth.spred over crust,top with veggies,serve immediately.are cover and refrigerate 1 to 2 hours before serving.cut into 8 rowsby 4 rows.
