Kinda like a cross between shrimp and lobster.
They are really good if you like the seafood, and you should not worry about "dirty water" because most of them are farmed in rice fields. When they harvest the rice, they drain the fields and harvest the crayfish.
The frozen ones are not going to be as good as the live ones. The live ones are like having a mini-lobster boil.
Anyway, just give it a try. Most people only eat the tails. Some people suck on the head to get the full experience.

crawdad's are from the crab family, they are great tasting, and have more flavor than crabs..no , the waters are not dirty,( some of the best catfish comes from down there.) crawdad's also make an excellent subsitute for crab in crab chippino...you ought to bake up some fresh french bread and watch the prepertation, most of louisaannas recipies are origianlly from New Orleans, and they really know how to cook fish...bon'appitte..I am sure your in for a real treat

Oh I grew up on crawdads. I would raft down the rivers with my Dad and catch them. Oh they are oh so yummy with melted butter. They do taste kinda a cross between a shrimp and lobster. They aren't sweet like crab, but have a very mild smooth taste. Oh try one out. Maybe someone will be willing to take the meat out for you to try.

Crawdads, Crayfish and Mud Bugs are all the same critter. They look like teeny tiny baby lobsters. They taste very good. Don't be freaked by the names. It's good eating.

We have them in our mountain lakes in Utah, clean water. I remember the day I first caught one..lol I was about 18 and fishing with a spinner for trout..guess what I caught? LMAO..I thought I had a lobster (yeah right, from a high mountain lake in Utah) and was just a yelling to everyone that hey I caught a lobster, I caught a lobster! Twenty plus years later they still tease me over my "lobster" catch!
Around here, they cook them like you would cook lobster and put them right into the boiling water and dip the meat into melted butter with a little garlic in it, or other sauces, but that is what the favorite seems to be.
If you like lobster and shrimp then you should enjoy these too!

If you believe in biblical teaching and alike, they forbid you to eat any such type creature. Read specifically in Leviticus chapter 11 it goes into detail about what animals are unclean and therefore shouldn't be eaten. They include in verse 9 marine animals. It states that you may eat what ever has both fins and scales. You may not, however, eat marine animals that do not have both fins and scales. You are to detest them and they will always be forbidden to you. So that includes seafood like crab, shrimp, lobster, octipi, etc... This same thought is reiterated in the book of Isiah.
Hope I made a difference in your viewing of food. Remember that not everything was ment to be eaten. Just because it can be doesn't mean it should be.

and it doesn't really matter if the water in Louisiana is dirty
cuz they should be cooked, and if not well cleaned.
and if theyre frozen, they couldve come from anywhere, and they wouldnt sell something thats not ok to eat =]

They taste allot like shrimp but since he is following a Louisiana recipe they will be spicy - go a head and enjoy. They are fresh water so they are cleaner than those caught close to shore.

think of it as a little lobster....only you are supposed to suck the brains out also. never had whole crawdads but had the meat in a gumbo once. it actually is good.
