80g onions chopped, salt to taste, 15g red chilli, 80g tomato ketchup, 15g ready made mint sauce, 30g ready made mango chutney and a handful of fresh mint for garnish. Mix onions, salt, chilli powder, tomato ketchup and mint sauce in a large bowl. Add chutney and mix again thoroughly. Put bowl in fridge for at least 30 mins to allow flavours to develop. Then add fresh mint to garnish. Enjoy

Although it doesn't sound like the way in which you were served the red onions I would like to add my favourite way of using them. It's called red onion marmalade
I slice the red onions and put them in a saucepan with a little oil or butter. Heat them gently until they sizzle then add red wine vinegar and brown sugar.
The proportions can be adjusted to taste. They should cook on a low heat for about 30 minutes and should be stirred frequently to prevent sticking. This is a tasty addition to sausages and mash among other things
