-Oatmeal w/ maple syrup or organic brown sugar
-Whole grain cereal (read labels) and soy/ nut milk
-Whole grain pastries (muffins, scones, bagel) w/Earth Balance, and soy yogurt
-Toast w/ Peanut butter
-Toast w/ black bean spread
-Tofu scramble
-Pancakes or Waffles with maple syrup (the real kind, cause the fake has High Fructose Corn Syrup), with soy yogurt

Add fresh fruit to all of these suggestions and it will be a nicely balanced meal!
All of these are vegan when prepared from scratch at home, or by replacing eggs and milk with vegan counterparts when buying mostly pre-made.

You could have cereal and soy milk. You could heat up some instant oatmeal (just check the label). You could have soy yogurt with granola. Some experts say you should eat just fruit for breakfast, but I want something more substantial. What works for me is having soy yogurt with granola at home and then eating some fruit when I get to work later.

Tomorrow I'm making a tofu veggie scramble and pumpkin waffles. Maybe some sort of potatoes, too (like homefries or hashbrowns.) On weekday mornings it's more like whole wheat toast and fruit.

I start the day with a green smoothie and then nibble on fruit the rest of the morning until afternoon. My body loves it.
