To the guy above me...eggs are definately not vegan.
You can make any cookie recipie vegan, it's really easy. Since your asking this question, I assume you already have a fav cookie recipie, just take that and replace the eggs with Ener-G egg replacer (this also makes the dough safe to eat without having to worry about icky raw eggs, lol). Replace the butter with margarine, and if the recipie calls for milk, use his favorite milk substitute.
Oh, I just thought of something else- you can also use apple sauce as an egg replacer. I've used this in cakes, but I'm not sure how it would work in cookies.

I dont have a recipe.. Just wanted to say you can use any cookie recipe by replacing the chocolate chips with some nice vegan ones..semi sweet...no milk ..very easy to find.. Eggs you can replace with ener g egg replacer, or a banana which is nice too!!! So if you jave a favorite recipe consider using it with these few adjustments.. Oh don't forget to replace butter with a vegan spread..Margarine isnt exactly vegan. Look for earth balance at trader joes, whole foods, or sprouts.
Good luck, and by the way..your boyfriend will love you for it :) I am sure he does already!

I'm not sure where this recipe is from (I found it on a random piece of paper w/ my other recipe books) but it is probably from "Vegan with a Vengence" by Isa Moskowitz.
Vegan Choc. Chip Cookies
1 cup margarine
1 1/4 cup sugar
1 tbsp. molasses
2 tsp. vanilla extract
2 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt (if using un-salted margarine)
1 1/2 cups semi-sweet choc. chips (make sure there is no milk in the ingredients... semi-sweet should be milk free)
preheat oven to 350 degrees F
Cream the margarine and sugar until fluffy. Then add the next ingredient on the list. Mix, and move to the next ingredient until everything is well mixed in 1 bowl. drop heaping spoonfulls spaced 2-3 inches apart on an ungreased cookie sheet. Bake 8-10 mins. Let cool 5 minutes, then transfer.
makes 3 dozen

My daughter is vegan and has adapted this recipe. These are so yummy!
Chocolate Chip cookies
1 cup Fleischmann's margarine(it's vegan)
3/4 cup brown sugar
1/2 cup white sugar
1 tsp. vanilla
2 measures of egg replacer( Celi-mix works)
2 cups enriched white flour
1 tsp. baking powder
1 tsp. salt
1 3/4 cups Harmonie Brand chocolate chips
(they're vegan)
Cream margarine, add sugar. Add egg replacer mix and vanilla. Blend in dry ingredients, add chips. Drop by spoonfuls 2" apart onto cookie sheets. Bake at 375 F. for 10 to 12 minutes. Allow to cool before removing from sheets. Makes about 6 dozen. For variation, add 1/2 cup chopped walnuts or raisins.

Becareful what chocolate you buy some contain animal oils, some even contain gelatin. I don't know of any vegan chocolate chip cookie recipes!
You probably can get vegan chocolate chips at your local health food store! They might have some recipes for you!

Almost any vegan cookbook will have a recipe for vegan chocolate chip cookies. I like to make the chocolate chip cookie bars from "How it All Vegan!" by Sarah Kramer and Tanya Barnard.
