how many dishes should i make and how many portions of each?

Here are some ideas:

1. Plan on a minimum of 4 -6 oz's of meat per person
2. 1 1/2 cups green salad plus 1/4 cup dressing per person
3. 1/2 to 3/4 cup pasta or potato salad pp
4. 1/2 to 1 cup fruit salad pp
5. 2 rolls
6. 4- 6 appetizers pp

Have a buffet with some of the following:

1. Pork Roast that has been cooked and shredded (representative of the Roast Pig they do in banana leaves)
2. Green salad
3. Fresh fruit kabobs with yogurt dipping sauce
4. Salmon ceviche
5. Potato and Macaroni Salad
6. Barbecued chicken
7. Sourdough rolls and sweet butter
8. Brownie Bites, mini cupcakes, macadamia nut cookies

Appetizers can include:

1. chicken skewers with pineapple salsa
2. Shu Mai with dipping sauce
3. Celery stuffed with shrimp and cream cheese
4. Cheese platter with crisp green seedless grapes
5. Prawns and cocktail sauce

You'd be better of making various hours'derves and letting them serve themselves. If you really want to make some dishes, try hawaiian pizza, with the ham and pineapple. A lot of people don't like it because the pineapple is put on after the pizza is baked. I put it on before and it rocks. You could make macaroni salad, or just a plain pasta salad. You want to allow at least a half cup serving per guest, some will have double servings, some won't have any at all. For twenty people you could probly get away with a double batch of two seperate dishes. Something easy, like spaghetti. You don't wanna burn yourself out and not have any fun. Stick with simple as much as possible. Without the added stress of having everything ready, you'll be emotionally exhausted by the time the party winds down.
