I like making my own vegan pizza. It takes some time but turns out so great.
Here's a link for the crust:

Sauce:

For the toppings I use a soy version of pepperoni and I also saute spinach, broccoli, and portobello mushrooms together in olive oil and a little oyster sauce before I put them on top of the pizza. I know you're not vegan, but I use Kass soy cheese. I also add the norm vegetables on top: olives, onions, also some pineapple and jalepeno.

This is by far my favorite meal to have. It's so tasty.

I have many, many favorites. These are some: 1) I have a thing for mashed potatoes (Irish soul food, m'dear), so I make Vegetarian Shepherd's Pie with Seitan and Mushrooms in it. Colcannon is a pretty fabulous Irish lunch or supper, too! 2) I love Mexican food, and I make killer veggie burritos and veggie enchiladas. 3) I also adore Indian food and make this really good vegetables and rice biryani dish. It has green peppers, carrots, broccoli, winter squash, cauliflower, onions, garlic, red peppers in, all cooked in spices and ghee and served over a brown rice pilaf. Killer!!! 4) Salad Caprese (tomatoes, fresh mozzarella, pesto, served over microgreens w/ ciabatta bread (or any other bread you like). Mmmmmmmmmmm! We live on tomatoes and fresh mozzarella all summer long in this household! There's an Italian salad called Panzanella which is made w/ tomatoes, cucumbers, green peppers, olives, cut up pieces of ciabatta or any other Italian bread, onions, cheeses, sort of like a Greek salad w/ bread cut up into it, and an olive oil and lemon vinaigrette as a dressing. In Italy, it's traditionally used as a way to "refresh" stale bread and make it something lovely again., and believe me, it IS lovely! 5) There is also a fall/winter casserole which has leeks, potatoes, Savoy cabbage, Italian cheeses like fontina and Parmesiano Reggiano and Romano, plus lots of garlic, butter and sage all baked in buckwheat noodles that is to die for. It is quite simply the BEST thing I've EVER eaten. It's in the Greens Cookbook in the casserole section. It's a classic Northern Italian casserole called "Pizzocher" that you could probably google and find a recipe for, but the recipe in Greens is the BEST I've ever found. Substitute soba noodles if you can't find any other kind of Italian ones and don't want to make your own. That's probably enough for now, just gotta give Eggplant Parmesan a plug, and blueberry bread pudding for dessert or chocolate/mocha creme brulee w/ caramel sauce or strawberry shortcake, or peach shortcake w/ almond cream, too! Email for recipes!

I absolutely LOVE vegetarian lasagna from Lean Cuisine!!!
And I make a really good salad. The way you do it is: get iceburg lettuce then sprinkle about a tablespoon of fetta cheese on it. Then use Tuscan Style Basil Herb dressing. It's a little tangy but amazing!

Good luck! Go Veggies!

My favorite recipie has got to be BBQ Tofu that my best friends mom made for me
one night then I was at his house for dinner.

I'll try to recreate the recipie:
1) Take one serving of olive oil and heat (on med.) in a pan. Or, to gain more health benifits from the oil, just spritz your tofu with it (when olive oil is overheated it can burn, go rancid and loose all it's wonderful healthy qualitites)

2) Take one serving of extra firm tofu and chop it into bite sized pieces, or however you want, really.

3) Put your tofu in the pan, and brown untill all the edges are a nice golden brown.

4) While your tofu is cooking, in a bowl, mix together 3 tablespoons of hot sauce (I use Tony Romas original sauce), about two teaspoons of soy cauce, a teaspoon of sugar, and 4 tablespoons of water. Mix it all together.

5) When your tofu is browned, turn the heat down or off. If there's extra oil in the pan, dab it off with a huge wad of paper towel. Wait a few minutes for the pan to cool off a bit, or you'll have a big woosh of smoke/steam/oil all up in 'yo face. Pour the hot sauce mixture in. If you turn the heat off, just flip the tofu around untill it looks like all the water has vaporized. If you left it on, let the tofu 'soak' for a while. It'll pick up more flavor this way.

You can eat it plain like that, or you can put it on a salad insted of crutons/meat, have it in sandwiches...the possibilities are endless. =]

I hope you enjoy!

Sauteed (Sorry, I cant ever spell that right) Spinach, mushrooms and onions. You can add in some tofu if you'd like. I personally like to add some trail mix to the pan while everything is cooking.

Spray a pan with a cooking spray like Pam (or use oil if you'd like, but i prefer not to).
Add the mushrooms and onions (cut to whatever size you desire) and let them cook a bit, stirring occasionally. Add some seasoning. Once the mushrooms seem cooked enough for you, add the spinach and allow it time to wilt. When everything is cooked, add in some trail mix (peanuts, cashews, sunflower seeds, raisins, cranberries! mm i love it!)

If you decide to add tofu to it, just cook that however you'd like and toss it in.

Delicious, I promise!

I was vegetarian by 4 years.
My favorite meal is yogurt with homey and fruits, (peach, melon, papaya, strawberry, only 1 of this is better) and wheatgerm is delicious and nutritious.
With best wishes to you & your diet.

Fried tofu and bean sprouts served with white rice!! The crunch from the bean sprouts gives the tofu and excellent taste, one of my favorite veg plates.
