your pigment changes when you ingest too much carotene (a naturally occuring plant pigment that is found in yellow, orange, and red plantmatter). Other important plant pigments are xanthophyll (yellow), clorophyll a (yellowish greens) and clorophyll b (blueish greens). As far as I know, only carotene will change your pigment. So to answer your question, foods like tomatoes, pumpkin, and oranges have the ability to change your skin pigment.
** Keep in mind that you REALLY have to gorge yourself on carrots to change your skin color even a little bit and it is not healthy to maintain a diet so rich in carotene because you would be poisoning yourself with excess vitamin a.

Yes agree with a lot of the answers above. Puree things, make them fun, eg, putting veggies in the shape of a face or something, try having things like a picnic, ie, carrot sticks, and sit on a blanket, and invite all the local teddies to join in too (hee hee) just keep trying all the various different types of fruit and veggies. Make your own versions of fast food, eg if he likes chips, then make some sweet potato chips of your own, etc etc. Also try and get him to help prepare his food if possible, this sometimes can help, and take him with you to the grocery store, so he can see all the different types of fruit and veg. Also try Annabel Karmel's various books, she has some fantastic recipies! :) Good luck.

I never noticed that about Asparagus, but I guess our bodies don't all work the same way.
Beets are really something though, I have had pinkish urine after eating beets.
