I've been completely vegan about a week now (WOO! =D) and I just realized that I can't eat cakes, cookies etc. because they are made with eggs and milk!
Does anyone know where I could get baked goods made with vegan ingredients?
Or does anyone have any recipes I could use for cakes cookies etc.?

Once you get into it longer you'll see how many vegan desserts there really are out there. It's pretty amazing.

Congratulations on your successful week as a vegan! :O)

Great suggestions so far. I've found the most difficult aspect of making vegan baked goods is replacing the eggs.

As has been mentioned, you can use any non-dairy milk to replace the milk. And the best replacement for butter is non-hydrogenated kinds (like Earth Balance).

Although Ener-G Egg Replacer is normally used to replace the eggs, I've always found it leaves a strange aftertaste to my delectable goodies. So instead I opt for Flax Eggs, which are SO good for you -- they provide some excellent healthy fats you need. And they're a cinch to whip up...

Basically, grind 1/3 cups whole flax seeds until they have an even consistency (almost powdered). Slowly blend in 1 cup water. Continue blending until mixture becomes thick and gooey. Then transfer to an air-tight container. At this point you'll want to WASH OUT YOUR BLENDER because once this stuff hardens it's a sheer disaster to clean.

Flax eggs will keep refrigerated for 3-6 days. This quanitity yields 6 flax eggs.

So, how much do you need of this "flax goo"?

3 Tablespoons = 1 egg. So if your recipe calls for 2 eggs, use 6 Tablespoons of your flax eggs.

p.s. Store flax seeds in the freezer until ready to grind. They can become rancid quickly.

Here's a good vegan cake recipe. It takes 15 mins to mix everything and just 45 minutes to bake. I always make it and it comes out good.

INGREDIENTS
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

As for cookies, I'm always able to find vegan cookies in stores so I've never baked my own. Usually if you look hard enough, all grocery stores have vegan cookies in their health food section. Also, most ginger snap cookies are always vegan. Here's a list of vegan snacks you would have never thought were vegan.

Also, if you really want to bake your own, it's not hard to veganize a recipe. Instead of milk, use soy milk, buy Ener G egg replacer, and Earth Balance Butter is vegan and works well with recipes too. Also, I'm pretty sure the WalMart brand of semisweet chocolate chips are vegan too. Here's a site with tons of cookie recipes just waiting to be veganized.

- 1.5 tsp. baking soda
- .25 tsp. salt
- 1 cup soy milk

Use electric mixer or whisk with fork in bowl until fully mixed, then bake at 375 for 25-30 minutes in a lightly greased pan.

Suggested Variations:
Orange Cake: Follow the above recipe, but substitute 2 cups of orange juice for soy milk.

Lemon Cake: Same as above, but add .25 or .5 cup of lemon juice and cut back the soy milk slightly.

Chocolate Chip Cake: sprinkle .25 or .5 cup of vegan chocolate chips on top of cake before baking.

Spice cake: Add 1 tsp cinnamon, 1 tsp allspice, 1/2 tsp ground cloves, and 1/4 tsp nutmeg.

Banana cake: reduce sugar to .5 cups and substitute 1 cup mashed banana for soy milk (keep a little soy milk if the batter is too thick).

1 cup margarine (make sure it's vegan!)
3/4 cup brown sugar
3/4 cup sugar
1 tsp vanilla

12 oz semi-sweet chocolate chips
PREPARATION:
Preheat oven to 350 degrees.
Sift together the flour, salt and baking soda in a large bowl and set aside.

In a separate large bowl, beat together the margarine, sugar, brown sugar, vanilla and egg replacer. Add the dry ingredients to this and stir until combined well.

Stir in the chocolate chips.

Drop one inch spoonfuls of dough onto cookie sheet. Bake for 8 to 10 minutes, until edges are golden brown.
