Heat a little olive oil in a pan. when it is warm, add a can of garlic and basil seasoned diced tomatoes. when the tomatoes are heated through and the juices have thickened a bit, add some chopped zucchini and simmer until the zucchini is tender. Serve over angel hair pasta.

Gagutza is a tomato-based soup with zucchini and pasta. Quarter and slice 2 or 3 zucchinis and put them in a large pot with a little olive oil and a lot of basil (2-3 tbsp.) Take two of the large cans of whole peeled tomatoes and shred each one briefly in the blender with about 3/4 can water. Add the tomatoes to the pot and bring the mixture to a boil. Turn the heat down and simmer for 25 minutes. Add about a cup of small shells or salad macaroni, and salt and pepper to taste. Simmer for another 15 minutes. It's yummy with some crusty sourdough bread (and parmeson or romano if you eat cheese.)

Kroger's Sicilian Pasta

2 pounds angel-hair pasta
1 1/2 pounds Roma tomatoes, cored and quartered lengthwise
2 medium zucchini, diced
2 medium yellow squash, diced
1 red onion, sliced
1 bunch parsley, chopped
6 cups Italian dressing of your choice
1 cup grated Parmesan cheese
1 (2.8 ounce) jar Salad Supreme seasoning
1 tablespoon dried basil
1 tablespoon dried oregano

Cooking Instructions:
Cook pasta in salted water, according to package directions. Drain and combine with remaining ingredients in a large bowl.

Serve warm or chilled.

Serves 16.

Variation: Saut? diced zucchini and squash in 1 tablespoon olive oil until the vegetables are slightly softened and browned before combining them with the rest of the ingredients.

Zucchini Pasta Bake

8 ounces penne pasta
1/4 cup Parmesan cheese
1/2 cup crushed saltine crackers
1 tablespoon olive oil
1/2 onion, chopped
2 cups chopped zucchini
1 tomato, chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 pinch dried celery flakes
salt and pepper to taste
1 cup shredded mozzarella cheese

Bring a large pot of lightly salted water to a boil. Add penne pasta, cook for 10 to 12 minutes, until al dente, and drain. Lightly grease a medium casserole dish.

Preheat oven to 350 degrees F (175 degrees C). In a blender or food processor, thoroughly mix the Parmesan cheese and crackers.

Heat the oil in a skillet over medium heat. Place the onion in the skillet, and cook and stir until tender. Mix in the zucchini, tomato, and garlic, and season with oregano, basil, celery, salt, and pepper. Continue to cook and stir until the zucchini is tender.

In the prepared casserole dish, mix the pasta with the vegetable mixture and mozzarella cheese. Top evenly with the Parmesan cheese mixture.

Bake 25 minutes in the preheated oven, or until the topping is lightly browned. Allow to sit 5 minutes before serving.

Well one of my favourites is to slice & saute some onion, add rings of zuccini and tomatoes (skins off) with butter, add a little Herbamare salt, saute lightly and serve up with some cooked pasta. A little chopped carrot gives colour and texture as the others are fairly bland. Enjoy summers bounty.

Boil pasta with water, olive oil, and a dash of salt. Sautee zuccini and broccoli in olive oil and toss in with cooked pasta. Add 1 tbs minced garlic and parmesean cheese (substitute dairy free parmesean for vegans.) You can also add in chopped cherry tomatos.

I just made this tonite. Serve it with Spagetthi

Depending on what's in your fridge girl.
I just made a stew out of
1.) hamburger meat
2.) two different kind of squash ( 1 zuchini, 1 banana zuchine)
3.) garlic paste
4.) tomatoe paste
5.) oil

pur oil in your frying pan. Medium heat. Heat the oil. Cut and slice the squash and zuchini. Add to the oil. Let it simmer until la dente. Meaning somewhat done.
Add the hamburger meat, use a fork and slice it into little pieces with the fork.
Add the garlic paste mix it in. 1 small can of tomatoe paste. Add it to the mixture. ! cup water add to it
Cover up on medium heat let it simmer.
Add following spices, Salt, Pepper, Paprika, Nutmeg.

You can serve that with Spagetthis. Bon Appetite. That's what I h/we have for dinner tonite.

Here are a couple

ZUCCHINI AND PASTA

Olive oil
8 cloves garlic
1 med. zucchini, cubed
1 (lg.) can crushed tomatoes
6 lg. basil leaves
1 lb. pasta (any kind)

Pour olive oil in saucepan to coat bottom. Peel and cut garlic into chunks. Saute over low/ medium heat for 2 minutes. Add cubed zucchini and saute for approximately 5 minutes. Add can of crushed tomatoes. Tear basil and add to sauce. Simmer for about 45 minutes.
Meanwhile, boil water for pasta. Cook al dente. Pour 3/4 sauce of pasta and serve remainder on the side.

May sprinkle Italian cheese and black pepper to taste.

FRESH TOMATO ZUCCHINI PASTA

3 med. zucchini, sliced
3 tomatoes, cut into wedges
2 tbsp. basil
1 (9 oz.) fresh pasta
2 cloves garlic, chopped
2 tbsp. olive oil, for frying
Parmesan cheese

In skillet brown in olive oil zucchini and garlic until tender and tomatoes until they wilt. Then add basil. Boil pasta until tender. Place on plate and top with vegetables and cheese. 2 servings.

I don't really have a recipe, but in the past I have sauteed in olive oil zucchini to soften and carmelize them while i boil some sort of small pasta. (bowtie, ziti, etc)

Then I make some sort of a red sauce with tomato sauce, paste, and crushed tomatoes and whatever spices i have on hand. (oregano, mediterranian oregano, parsley, thyme, basil, bay leaves, etc) don't forget the garlic! lemon zest will do wonders too.

mix with carmelized onions, peppers, chicken, whatever you like and have on hand.
let your imagination run wild! mmmm...hungry now, good luck!
