Other suggestions are good, but a "Must Have" for this party:
numerous cans of CheezWhiz (you know, the squirt cheese in a can?) and Chicken-in-a-bisquit crackers. For entertainment later on, you can squirt the cheese in the dog's mouth.
Milwaukee's Best is good cheap white trash beer.

I actually attended a wedding reception that I think would fall into your category of "white trash". Here's what they served:
1. Fruit platters from Albertsons with containers of Cool Whip
2. Potato chips from the bags with pre-made dips in their plastic containers
3. Chinese take out in the styrofoam containers
4. Weiners cut in half, boiled, and served with ketchup, mustard, and toothpicks.
5. Baked beans
6. Hamburgers with buns
7. Barbecued chicken with extra sauce from the bottle if you wanted it.
8. Salad (pre packaged) with a bottle of ranch dressing
9. A platter of coldcuts, rolls in the bag, and a jar of mayonaise
10. Platters of storebought Hostess cupcakes, Twinkies, and SnoBalls.
To drink? Lots of beer! The cake? Two layer, 9 inch round devils food with white frosting and some glitter.
Needless to say, I won't forget that wedding in a long long time! Should I also add that the bride and groom met while karaoking in a country bar?

"White trash" is an offensive, disparaging term for a poor white person or poor white people, so if you must have a "White Trash Party" specify that each of your guests bring a (possible veg/meat or veg) casserole or a dessert or if they're flush--both-- after all you're too poor to foot the expenses of this party yourself.
Base Menu:
Macaroni & cheese or Mashed potatoes
White/navy beans or pintos or any other dried bean that you can cook in large amounts (fat back or ham hock seasoning)
Corn Bread or Biscuits (after all bought bread costs too much)
Slaw
Pound cake or fresh fruit
Tea if your flush and water if you're not
Suggestions for side dishes for friends to bring--anything fixed from local garden: squash, tomatoes, cooked cabbage, carrots, etc and Best dessert dish; cobbler, melons, fruit in season; try to pin down expected dish; cause everyone else is white trash too and you'd like variety.
Generic everyday clothes and no real jewelry except a wedding band.

I would suggest since it is white trash party foods that you get the chips and open them up and leave them in the bag, same with dip- buy premade dips and just take the lids off of them, hotdogs, bolonga sandwiches, peanut butter and jelly sandwiches and leave the crusts on and cut them into fourths like you normally would cut up a kids sandwich, nuts in the shell, hard peppermint candies or those ugly jellied orange slices, You could do beanie weenies, but make it tastier of course. Like a good spicy bbq beans and good quality hotdogs. Potato salad or macaroni salad.

You can't forget the pickled pigs feet, sardines and SPAM. No Offense to makers of these products, but it was well known in my hometown the poorer people ate those items the most. That and fried bologna sandwiches along with Trash Can punch (with or without the alcohol depending on your age).
