I went to visit the Amish and they had a bulk food store, where I bought a bag of Veggie Chips. They look like dried out Vegetables (Carrots, Green Beans, Zuchini, Squash, Red Onion, Parships, Potatoes, etc.), but they tasted more like Potato Chips with just a slight veggie taste. They are excellent and addictive and if I could figure out how they make them - I would be eating veggies all day long!

They make them the same way as they make potato chips. They slice them thin and deep fry them. A little salt and there you go veggie chips. You can also use whole green beans and deep fry them to make something like french fries. I believe they do this at TGI Fridays.

Slice veggies. Preheat oven to broil. Grease a baking sheet. Bring a large saucepan of salted water to a boil. Add veggies, reduce heat, and simmer for 3 minutes. Drain in a strainer/colander and let cool slightly.
Transfer veggies to a large bowl. Drizzle olive oil to coat, then add about the same amount of cornmeal. Add salt and pepper according to your taste. Arrange veggies on the baking sheet. Broil until lightly browned, 4 to 5 minutes.

You just slice veggies very thin and either deep fry or bake. You can also make them in a food dehydrator but they will be kind of chewy (works great on fruits like apples and bananas though). Then you can add salt or any other flavor you might like.
