APPLE BUTTER YAM PIE
1 (9 inch) unbaked pastry shell
1 c. hot mashed yams or sweet potatoes (about 3/4 lb. raw)
1/2 c. butter, softened
1/2 c. firmly packed light brown sugar
2 tbsp. flour
1 (15 oz.) jar apple butter
1/2 c. milk
1 1/2 tsp. grated orange rind
1/4 tsp. salt
3 eggs
Whipped cream and nuts (optional)
Preheat oven to 400 degrees. In large mixer bowl, beat yams, butter, sugar, and flour until well blended. Add apple butter, milk, rind, salt, and eggs; beat well. Turn into pastry shell. Bake 10 minutes. Reduce oven temperature to 350 degrees. Bake 50 minutes longer or until knife inserted near edge comes out clean. Cool. Serve warm or chilled. Garnish with whipped cream and nuts, if desired. Refrigerate leftovers.
APPLE YAM PUFFS
2 c. biscuit mix
1 tsp. cinnamon
1/2 c. mashed yams
1 beaten egg
1/4 c. sugar
1/2 c. applesauce
1/4 c. milk
2 tbsp. oil
TOPPING:
1/2 c. sugar
1/2 tsp. cinnamon
1/4 c. melted butter
Combine biscuit mix, sugar and cinnamon. Add applesauce, yams, milk, egg and oil. Beat until well blended. Fill greased muffin pan 2/3 full. Bake in preheated 400 degree oven for 15-20 minutes. Cool on rack until warm. Roll entire muffin in melted butter, then in sugar mixture. Cool on rack or serve warm. Serves 12.
BUTTERY PINEAPPLE YAM BREAD
1 (4 oz.) pkg. pecans
1 1/2 c. brown sugar, packed
1 c. butter, softened
1 (8 1/4 oz.) can Dole crushed pineapple in syrup
1 c. cooked, mashed yams (fresh or canned)
3 eggs
3 c. flour
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. mace
1 1/2 c. raisins
Pulverize pecans in blender. Cream butter and sugar until light and fluffy. Beat in undrained pineapple, yams, and eggs until mixed. Combine pulverized pecans and flour, baking soda, cinnamon, and mace; beat into pineapple mixture until blended. Stir in raisins. Turn into 2 (8 1/2 x 4 1/2 inch) loaf pans. Bake in 350 degree oven for 50 to 60 minutes. Turn onto wire racks to cool completely.

It depends on what you call yams. I am assuming that you are speaking about sweet potatoes from your reference to candied. Yams are a different veggie.
You can make a sweet potatoe pie which is delish, or one of my favorites a "sweet soup".
Roast 3 sweet potatoes and one butter nut squash that you have halved, brushed with olive oil and sprinkled with salt and pepper. In a soup pot sautee 1 small onion in a 1 tbsp. of both olive oil and butter until its transluscent. When the sweet potatoe and squash are done add it to the onions. Add 1 quart of chicken stock. If it's not enough to make it a soup consistency add a little more. It should be the consistency of heavy cream. If you don't have one of those hand blenders, use your blender in stages. Add salt, pepper, thyme and 1 bay leaf and nutmeg as your taste likes it. Let this simmer for about 25 - 30 minues. Turn off the heat. After this time remove the bay and sprig of thyme. Then add 1 quart of light cream. Season again and YUM! If you want to freeze this just dont add the cream. You can add the cream when you reheat.

unless you live in south america, you've never actually eaten a yam...they don't ship well so the U.S. doesn't have any...in the U.S. we developed a strain of sweet potatoes (which are a completely different vegetable) called a sweet potato yam. it is just a little sweeter and the skin is a little thinner and therefore more tender...it is still a sweet potato though i am afraid... so if you want to serve yams 20 different ways eat in south america...
incidentally, just for anyone who would be curious...the same can be said for cantaloupes...they are only grown in Europe...what we think of as cantaloupes here in america is actually a small hybrid of a muskmelon...some stores sell the "cantaloupe" and muskmelon because they are so different in size...people think they are different melons but they are just different varieties of the same melon...
