I bought some but I don't know if I should heat it up or eat it cold

kimchi is a cold dish and definitely do not require heating..just grab it from the fridge and eat it with rice or just kimchi itself

1st u would have to let it spoil for a bit like cheese if u will. Than keep it in u'r refridgerater (cold) and eat it as a side dish with any of u'r korean or asian dish how ever u'r taste fit. The only way u'll eat it hot is whan u'r making kimchee stew. KImchee stew is fairly simple to make. on a pan put water about half the pan. Than let it boil, in the boiling water drop in slice of kim c and throw in slice of spam and tofu. Get some "so ko kee da she da" (beef seasoning) from a korean market and add a spoon of that witch is a korean stew seasoning and again let it boil for like 5 min. Wa La Kim Chee stew. Enjoy

Cold but often room temperature. It is fine to mix with hot food, and there are dishes (kim chi chige) that are cooked with it. Usually, it is served in it's own dish at the table cold and is the last thing taken off the table -- at room temperature. It's hard to do badly with kim chi.

My Husband keeps it in the fridge, and then just eats it from the jar or puts some on top of some fresh-steamed rice.

It is PICKLED cabbage... so I really wouldn't "cook" it.. but you can always add it to a warm meat or soup dish for the spice and veggie content

It is best when it is cold. You want the crunchiness as well as the spiciness. heating it will turn it mushy and there goes the crunch.

I like my kim chi cool--not cold. But, of course, except when I flavor my hot soup with it.
