its salty, fishy, spicy and wonderful!
it has coconut milk in it, so it is a bit fattening, get over it and try it!

I just made a Red Curry Chicken yesterday. Start with two cans of Thai Kitchen (brand) coconut milk, (not coconut cream). There is a recipe on the label also that calls for green curry instead of red, and shrimp.
I had purchased earlier a container of Red Curry Paste and I add two tablespoons of that to the coconut cream and boil until it sizzles about 8 minutes.
To that I add thinly sliced chicken breast, 2 tablespoons of fish sauce, 2 tablespoons brown sugar and cook another 10 minutes simmering. Then add firm vegetables such as potatoes, broccoli and cook another 10 minutes, finishing with soft vegetables such as sliced zucchini or yellow squash, bok choy or napa cabbage sliced into strips.
When those are tender add 1/4 cup basil leaves and 1/2 cup whole mint leaves.
Stir and serve with white rice.

I love Thai curries. Are rather spicy but it depends on the curry paste you use, the brand and how much you add. You need to add coconut milk/cream to it so it ends up rather creamy, lots of recipes have fish sauce in too and palm sugar (you can use brown sugar as a sub). Are usually quite runny...If I have a really spicy one I serve with plenty of rice and some cucumber to help cool it down.
If you are worried about the fat content you can get coconut flavoured evaporated milk that you can use instead of coconut milk. It has a much lower fat content - not quite the same but a good substitute.

note that there are three types of Thai curry:
red, green, & yellow.
I recommend that you hit a Thai lunch buffet.
This gives you the opportunity to try a variety, for a reasonable price.
If you have a good asian store in your area, you should be able to pick up small cans or packets of thai curry pastes for cheap.
Open each up, give it a sniff, and decide if you want to procede.
Above all, I highly recommend using only recipes that involve coconut cream. These are deliciously rich.
Tips for buying cans of coconut cream:
1) don't buy coconut milk; not tasty enough
2) if you have a choice, but the coconut cream that has the highest fat content per ounce.

It is usually yellow-orangish. For a can it has 15 calories for 2tbsp. which is plenty when cooking. You are supposed to add it with coconut milk but i just add soy sauce. I's really not fattening and it's good for your appetite. Have you ever seen Thai people. They are pretty skinny and the eat alot of pork, milk, and occasionally ice cream. It's okay to eat is moderate amounts
