HONEY DIJON CHICKEN BAKE:
4 skinless boneless chicken breast halves
1 tin cream of chicken soup
1 tbsp. honey
3 tbsp. dijon mustard
Place chicken in shallow baking dish.
Spread mixture of soup,honey and mustard evenly over the chicken.
Bake at 400 degrees for about 40 minutes or till chicken is cooked through.
Simple but very good. Add potatoes or rice as a side and I use a green veggie such as beans or broccoli to go with it.

Get a pork roast, put sliced mushrooms, onions and 1 can of Campbell's golden mushroom soup in a covered pan. The roast will shrink by 30% so account for that. After 1 hr put in carrots and potatoes and wait 1/1/2 hr more and it will be tender and delicious. 325 degrees. Don't add water to this the soup will be gross out of the can but by the time that the meal is done it will be an incredible gravy.
Or you mentioned chicken. It is summer time, make a nice pasta salad, grill some chicken parts w/barbecue sauce and some zuccini or summer squash would be a very nice meal.
Pasta Salad - tri-color spirals, black olives, red onion, Robust Italian dressing, cubes of cheddar cheese, cucumber, chopped not sliced but chopped pereroni. This is a salad that everyone requests from me when we get together.
Zuccini or summer squash, slice, add salt and pepper put in foil with a little butter and let hubby grill.
Chicken- get a whole chicken cut up cook slowly on the grill adding any store bought sauce 5 minutes before serving. That way the barbecue sauce won't hide the flavor of te grilled chicken.
Dessert for any summer meal, graham cracker crust, fill with vanilla ice cream and top with thawed frozen strawberry slices (the kind with the syrup in the cool whip section of freezer) and top with cool whip and blue berries.

Your dinner needs to provide good eats, conversation and next to no clean up.
I'd go with beer can chicken which is easy, yummy, and always provides interesting conversation. If you think beer would be a no-no with the inlaws, I'd suggest Sprite with a tablespoon of your favorite spice mixture. The link below is for the recipe by the guy who made this famous, Steve Raichlen.
Since you have the grill fired up, toss on some sliced zucchini and red peppers, providing both a yummy side dish and a dash of color to the plates. Slice the zucchini into long strips to make them easier to flip. Prep the veggies by slicing, pour just a little olive oil in your hands and rub over the veggie slices, then follow with a light dusting of salt.
Round out the meal with a store bought pasta salad.
And presto ... dinner, conversation, and super quick clean up!

Chicken Marsala is always a hit with people. I have a very easy recipe. Pair it with rice or some pasta. This always impressed any guests of mine. Give it a try.
NGREDIENTS
1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry
DIRECTIONS
In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

Do they like pasta? Do a chicken fettucine alfredo. Get the premade sauce and pan-fry your chicken.
Chicken cesar. Again, premade salad dressing, croutons, Romaine lettuce, parmesan cheese (fresh is better than the canned crap), bacon bits, garlic toast. Nice, light and summery.
Something I like to do...it's a little more complicated but not much...I make bread dough and fry it. Then I pan-fry my chicken, cut it up and cover it with a premade marinara sauce. I slice open the fry bread and put the chicken and marinara sauce inside. Then I add a little grated cheese. It's not fancy and it's not hard, but it's sure comfortable.

Grilled Chicken with Grilled Veggies. Serve with either baked potato or pasta (ur favorite).
For a good salad to go along with it, take tomatoes, onions, cuecumbers, and speggtii (cooked) tose w/ italian dressing. also mariante the chicken {like all night} in italian dressing, and grill as normal. I learned the salad from an old friend and the chicken from my aunt. its supper yummy!
take apples (or peaches) cut in half, and grill til u see grill marks. serve w/ ice cream.

Chicken Enchilada Skillet
• 1 tablespoon oil
• 1 lb. boneless skinless chicken breasts, cut bite-sized
• 1 14.5 oz. can chicken broth
• 1/4 cup ranch dressing
• 2 tablespoons flour
• 6 flour tortillas, cut into small pieces
• 1 cup shredded four cheese
• 1/2 cup salsa
• Heat oil in large deep skillet on medium-high heat. Add chicken; cook 7 minutes or until cooked through; stirring occasionally.
• Mix broth, dressing and flour until well blended; gradually add to chicken, stirring constantly. Bring to boil. Reduce heat to medium-low; simmer 3 minutes. Add tortillas; stir to combine.
• Sprinkle with cheese; cover. Simmer 3 to 5 minutes or until cheese is melted. Top with salsa.

Grilled Raspberry Chicken
• 6 boneless, skinless chicken breasts
• 1/2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1/4 cup raspberry vodka (optional)
• 1/4 cup finely chopped mint leaves (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries, for garnish (optional)
Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

marinate the chicken in italian or balsamic vinagrette dressing and throw it on the grill. fix some rice and a nice summery fruit salad. or a green salad w/ summer veggies and have fruit salad (perhaps w/ vanilla ice cream) for desert.
