For mashed, use russet or "idaho" baking potatoes... you want the mealier texture.

For potato salads or grains, use Yukon Gold (yellow inside) or red-skinned (also called "new" potatoes. They are a bit waxier and hold up better.

Yes, sweet potatoes ("yams" if grown in Louisiana) are orange inside and sweeter than "white' potatoes.

Sweet potatoes or yams do have an orange flesh. You can mash them as you would any other potato. I prefer Yukon Golds for mashing because they have a natural buttery flavor but I use reds too. Experiment and you will be able to taste the differences.

Any white-fleshed to cream-fleshed potato makes good mashed potatoes (russet, idaho, baby reds, yukon gold). Some people even like mashed sweet potatoes and I know a hamburger place that serves sweet potato fries.

You can mash any potatoes.
The sweet orange potato is a nice change with plenty of cracked black pepper.

Yams become "candy Potatoes" once you upload the Brandy, Brown Sugar and marshmallows....magnificent? i like those in the time of the vacations or on Sundays. in any different case, i like regulare potatoes.
