Aromatic soup boasts special qualities
Every culture has great restorative stew of humble origin and ingredients.
The Hungarians and other Central Europeans have their cabbage soup. The French have their potage St. Germain. The Greeks have their white bean soup and the Mexicans have their menudo.
Menudo is a wonderfully aromatic soup made of tripe, hominy and chili, and is stewed for hours with garlic and other spices. the broth is rich, red, papery, and glistens with fat. It stimulates the senses, arms the insides, and clears the head.
Menudo is served in big open bowls brought to the table steaming and fiery. It is usually eaten in the wee hours after a night out on the town and widely proclaimed to be an antidote for hangovers.
Mexicans brag about menudo's goodness, about how the hot broth with its medicinal condiments, particularly the chili, replenishes vitamins A and C, soothes the stomach, and stimulates the gastric juices to overcome any loss of appetite.
Unfortunately, unlike the enchilada, taco, and tamale, menudo has not become a part of the popular Tex-Mex cuisine.
Wherever there's a Mexican community, there's menudo and San Marcos is no exception.
A hearty tripe soup as it is prepared in the north of Mexico, this is especially recommended as a cure for hangovers. It is always made on New Year's morning.

The word "menudo" in Mexico can mean the raw stomach meat as well as the stew. It is a traditional Mexican dish. It is a spicy soup made with tripe (the small intestines rather than the stomach). Typical ingredients added to menudo are dried oregano, ground chile flakes, lime juice, fresh cilantro, and chopped onion.
"Menudo" also refers to an entirely different dish made in the Philippines. This dish, in contrast, is made of garlic, onions, diced pork chops, pork liver, diced potato, green bell peppers, soy sauce and tomato sauce, and seasoned with salt and pepper while it is cooked. Filipino menudo will usually contain tripe though common variants will include chickpeas, red bell peppers, and raisins.
Menudo also means "small change". It is unknown if the soup came to be known as such since it was left-over, or if the "small change" left on the table for the server was like the soup.

Menudo is a tripe soup. It can either be spicy or made "white" without the chile in it. Along with the tripe, Menudo traditionally includes hominy. There are a variety of condiments that you can put into the soup. (dried oregano, chopped onions and lemon) The sides dishes are completely up to the chef.

I believe that Menudo is a stew made from the lining of the cow's stomach, otherwise known as tripe. I've heard that its tasty and spicy, served with warm tortillas and refried beans.

It is a mexican stew made of cow. my mom and my grandma make it all the time and I just asked my grandma what it is made of and she said cow stomach or tripe I think it is good I eat it on our mexican parties we throw some times with tortillas LOL l.It is also a cure for hangovers. you also put a lot spices on it like cilantro. here is a picture of the yummy dish and the drink next to it is called Agua the horchata or horchata
