Eat a HUGE sandwich with turkey, ham, mustard, mayo, pickles, lettuce & tomatoes. Filling & yummy!

A simple salad, and an excellent way of subtly enhancing salad greens with beans for a wholesome, unpretentious summer lunch. Add a loaf of wholewheat bread and you have a nourishing and low-cost meal. I usually mix haricot and soya beans in equal quantities, but feel free to adjust according to personal preference.

4 x 250ml cooked beans of choice
4 carrots, coarsely grated
8 slim spring onions, chopped
2 sweet apples, peeled, diced and tossed in lemon juice
4-5 x 250ml coarsely shredded cabbage
250ml raisins or sultanas, briefly plumped in hot water and drained.
herbed sea salt to taste
walnuts or roasted sunflower seeds

250ml mayonnaise
250ml cultured sour cream or Bulgarian yoghurt or half-and half
15-20ml prepared mustard

Mix beans, carrots, onions, apples, cabbage and raisins in large bowl.
Stir mayonnaise, sour cream or joghurt and mustard until well combined.
Fold dressing into salad ingredients, cover and chill.
Just before serving, mix in walnuts of sunflower seeds.

A nice cold crisp salad of Boston lettuce with chopped green onions, bell peppers and tomatoes. To that, add: a splash of olive oil and Salata Vinegar. Then a dash of garlic powder, black pepper and a teeny bit of real lemon juice. Toss well. Think I'll make one for me too.

are you a vegetarian or a vegan? if your a vegetarian you can eat almost anything but poultry, fish, red meat and gelatin. if your a vegan say away from the above and any animal by products like milk, eggs, casein and whey.

Seeing that this is in the vegetarian/vegan catagory i would recommend:
chopping up some romaine lettuce
throwing in some bacon bits,
a handful of grated cheese,
some nice rotisare chicken
------------
always leaves you wanting more.
