Well, my suggestion would be to make the theme the packers with things in yellow and green accordingly. You could also try to get a cake in the shape of a football helmet, packers style. Other than that i wouldn't be completely sure, it depends on lot of things like how many people are coming and things like that.

I agree with the whole Packers theme because it will be easy to execute. If you went with other interests of his it might get complicated.
I would do the party sort of like you would do a Superbowl Party but birthday style. I would definatey get a cake of some sort in the shape of football, helmet, football field...something that says football/Packers.
If you are going with just snacks/fingerfoods the following might be ideas:
Chips and Salsa and Cheese Dip
For cheese dip here is an easy one:
Put an entire block of velveeta chees cubed in a crock pot and let melt stirring often. Then add a can of chili beans and some cooked and drained gound hamburger seasoned with taco seasoning.
Pretzels
Potato Chips and French Onion Dip
Peanuts - in the shell, and leave something convenient for people to throw shells in
Fruit Pizza and Veggie Pizza are always a hit no matter what the occassion.
If you are wanting more of a dinner then try burgers and hot dogs with the above side items and you have a meal.
Drinks like bottled water, cans of cola/pop, beer, wine whatever works for you.
Decorate in a theme of green and yellow maybe even where a Packers jersey, jeans and tennis shoes on the big day.
You don't have to go crazy with decorations either. Set up the food on one table and cover with green table cloth. Set up drinks on another table and cover with yellow table cloth. See if you can find some little football sequins and throw them on the tables. Maybe some green and yellow votive candles and there you go.

You should cut bacon in thirds and wrap around smokies and insert toothpick.
Lay in 13 x 9 cake pan and cover with brown sugar. Let set overnight or so and bake for 45-55 minutes @ 350 degrees.

1 can (16 oz.) TACO BELL HOME ORIGINALS Refried Beans
1 Tbsp. TACO BELL HOME ORIGINALS Taco Seasoning Mix
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 cup shredded lettuce
1 cup KRAFT Mexican Style Shredded Cheese
1/2 cup sliced green onions
2 Tbsp. sliced pitted ripe olives
RITZ Chips Original or WHEAT THINS Baked Snack Crackers
MIX beans and taco seasoning mix. Spread onto bottom of 9-inch pie plate or quiche dish.
LAYER all remaining ingredients except chips over bean mixture; cover. Refrigerate several hours or until chilled.
SERVE with chips.
TIPS:
Make-Ahead
Dip can be stored, tightly covered, in the refrigerator up to 2 days.

1 bar cream cheese
1 pack dry Hidden Valley Ranch mix
2 cups shredded cheddar cheese
1/2 can to 1 can of beer (depending on what consistency you want it to be)
Mix everything together and serve with chips.
Can be doubled if you're making a larger amount.

Brandy Slush
9 cups water
2 cups brandy
1 can (12oz) frozen lemonade, thawed
1 can (12oz) frozen orange juice, thawed
Combine all ingredients in a 4 quart freezer container.
Cover and freeze overnite, mixture will remain slushy.
Spoon into individual glasses.
Serve with a spoon cause you wont be able to wait to drink this one!

Get the ingredients for pizzas and have the party goers make their own pizzas!
Use disposable pie pans; have all the ingredients lined up on the kitchen counter, the oven set to the right temp, and add a huge green salad for good stuff.

An idea that I can offer is doing a Mardi Gra inspired casino and nightclub setting outdoors, complimented with a bar area, with an assortment of alcoholic beverages, cocktails, liquor, shots, ect.

i think you should have an after party with him ( just the 2 of you) and have a really romantic time, like have a chocolate fountain, and a plate of strawberries. as for the party, just throwing a suprise party for him will make him really happy!
