You didn't say what you needed to know about flour, so I'm not sure how to answer your question. Traditional flour is made from wheat that has been ground and processed using bleach to make it that white color with such a fine texture. Whole wheat includes the shaft and usually isn't bleached or processed to give it that "grainy" texture and flavor. Other items that have also been ground into "flour" include, azuki beans, garbanzo beans, rice, and soy. I'm sure there are others but these are the most familiar to me.

I will guess that you mean all purpose flour. Generally this flour is used in making breads, cakes, cookies, scones etc. If your recipe calls for cake flour it is because the cake should be light in texture. You can use whole wheat flour in breads for a more flavorful bread. Using stone ground flours in breads also increases the nutrients. I hope this helps. :) ..<><..
