To get the creamy texture you want follow these steps:
In a heavy sauce pan over medium heat melt 1/2 stick butter and stir in 3 Tbsp flour. Stir this until the flour begins to "toast" but don't let it get dark. Add 1 cup heavy cream or half and half and bring to a simmer. Reduce heat and slowly stir in 4 cups shredded cheese by handfulls to melt and add any desired spices. Serve.
You can make adjustments to taste as follows:
Heavy cream will be the richest, creamiest tasting followed by half and half, whole milk, skim milk. All will work, it's a matter of taste balanced with your personal dietary fat restrictions.
Allowing the milk to simmer a few minutes while stirring or adding more cheese will make it thicker. Don't boil after cheese has been added to try and thicken.
This will work with almost any cheese combination. Enjoy!!

Mexican Queso Fundido (Fondue)
I N G R E D I E N T S
1 cup white wine
1/2 pound mozzarella cheese, grated
1/2 pound Monterey Jack, grated
1/2 pound goat cheese crumbled
2 poblano peppers, roasted, peeled, seeded and finely chopped
1/4 pound Mexican chorizo
6 cloves roasted garlic, smashed to a paste
Salt and freshly ground pepper
Bring the wine to a simmer in a double boiler. Add the mozzarella and Jack cheese and stir until melted. Add the remaining ingredients and cook for 5 minutes. Place in a fondue pot and serve with flour tortillas and corn chips

The only authentic Mexican restaurants I know are the ones I eat at here in Mexico City, and I've never seen white cheese dip. Maybe it's a norteño thing. (shrug)

Ask the server what type of cheese is being used and check your local markets for it. You may have to have it ordered for you, or to purchase it over the internet.
Queso means cheese, and queso blanco means white cheese. That's not a type but a description.

Well sometimes they have them in the spanish section in the supermarket.Although you can get a fondu pot and mealt it yourself.I think the cheese is queso blanco...which is white cheese or whit montery jack.Look in the latin sections of the markets.

Go to a Latin Market. Otherwise the closest you can get is mozzarella cheese or Brie

the cheese is called queso, usually comes in a vaccum sealed package, Ive seen it at walmart , near the ricotta and cottage cheese
