-I've been wanting to try adobe sauce and nopalitos because I've heard that's a good combo, but nopalitos can be hard to find.
-I've made enchiladas with vegan enchilada sauce (I think most are vegan anyway, just check the ingredients) and chopped tomatoes for topping, with creamed avocado and soft tofu filling (flavour with nutritional yeast or something like Instead O' Cheese if you want it to taste cheesier instead of just creamy).
-Amy's makes black bean burritos and refried beans and rice burritos, for something quick and easy.
-Tostadas piled with beans, avocado, tomatoes, onions, olives, etc. are a personal favourite.
-If a recipe calls for chorizo, replace with Soyrizo (very yummy stuff).
-Guacamole, hot salsa, salsa verde, and corn tortilla chips are all easily vegan (again, check ingredients to be sure).
-Fry up some cassava or yucca (in veg. oil) if you can find it.

Black or refried beans (or any beans, but black and refried are more "autentic"; Even pinto) can sub for meat. It's what I do at Mexican restaurants, even Taco Bell on the very rare occasions that I go there. (I do not consider Taco Bell real Mexican, but Mexican wannabe.)
Most taco seasoning and sauces are vegan, as had been said; Just read the labels.
The cool thing about Mexican is that it's versitile. My husband is a meat eater and I'm vegan. We can walk into a Mexican restaurant and come both come out happy.

I make a vegan Mexican dip that even meat-eaters love!
Get a nice, 9" dish
- Make the bottom layer "beef" taco, using YVES "beef" crumbles - cooked acording to taco seasoning package
- Next, a layer of homemade guacamole
--------Use 2 avocados, skin and take out the seed
-------- Add raw, chopped onions and tomatoes and some salt or garlic salt and lemon juice
- Make the next layer a heated and cooled layer of vegetarian refried beans (makes sure they say vegetarian, otherwise pig could be in there. :)
-For the top layer, use a picante salsa
Use corn chips for dipping. This is the best stuff on Earth.
... I almost feel I shouldn't be sharing it.

You can also make fajitas with seasoning, grilled veggies and Morning Star Farms vegan "chicken" or "beef" strips.
Make a taco/burrito buffet with salsa, guacamole, tofu with taco seasoning, or beef with taco seasoning, tomatoes, lettuce, black beans, rice... anything yummy.
You can even find sour cream... it is called "Better Than Sour Cream."

Make fajitas with onions and bell peppers cooked until limp, refried beans (canned fat free are usually safe, otherwise mash some canned pinto beans with cooked onion and cumin powder), shredded lettuce and home made guacamole. (Google a guacamole recipe, there should be one without sour cream). Make with a side of mexican rice. The only problem might be finding the wraps without animal stuff in them. If worse comes to worse, go with corn tortillas. Chips and salsa- Ole'
There are fake meats that are vegan. Boca burgers could be crumbled and seasoned with taco seasonings if you want tacos.

there are SOOOO many things u can -get some tofu, season it up well and make tacos! remember- anything is fine- just no meat or dairy products- when in boubt read the ingridients-
