i preffer white sauce

Recipe for: Pasta with clams,

4tbsp olive oil
1 clove of garlic crushed
30-40 med fresh clams scraped and cleaned
2 tbsp dry white wine.
1 oz parsley chopped
1 tbsp chopped basil
1/2 tsp salt
1.5 lb (650g) fresh linguine or spaghetti

Heat the oil in a pan and fry the garlic until tender. Add the prepared clams, wine, parsley, basil, salt and cook for 10 mins, stirring occasionally.
Meanwhile cook the pasta in a large pan of boiling salted water for about 2-3 min if fresh pasta, until it is tender but still firm, al dente.

Lift out the clams from the sauce and remove them from their shells, reserving a few in their shells for the garnish. Return the shelled clams to the pan and, as soon as the pasta is cooked, drain and mix with the sauce.

To serve scatter over the reserved clams and garnish with the fresh basil.

Serves 4 - 6 people

A white wine caper sauce, with a touch of lemon and garlic and parsley. YUM. I made mussels with that sauce once. Incredible.

No sauce...!!! I mean just stir fry the ingredients with olive oil / garlic / white wine / fresh basil leaves / salt & pepper to taste, ... wonderful!

Basic white sauce with dill weed and some chicken boullion granules (my secret ingredient). Yummy.

make it with clams and add the water , add half and half , a little garlic ,parsley and oregano in a pot and then buy fresh clams to go around it ,it is so good .

I WOULD USE A MARINARA SAUCE. SOME PEOPLE DON'T CARE FOR FISH WITH CREAMS.. PLUS THE CLAMS WILL TASTE BETTER IN A TOMATO BASE.
