please help....i need to convince her to make something that tastes good, isn't boring, and doesn't have celery, cooked mushrooms or bell peppers in it. Can you give me some recipes that i could use?? pretty simple so i can prepare it too, just in case she won't.... i'm fourteen, so nothing that requires too much time and expensive ingredients....(and no tofu!!!)

Veggies are great if you don't overcook them. Never boil them, as they get soggy and all the nutrients release into the water. Try steaming them by putting them in a strainer suspended over boiling water. Then make a quick vinaigrette of olive oil, lemon juice and garlic to top the veggies. This works especially well with green beans and broccoli.

My other favorite thing to do is grilling veggies. I marinate asparagus in worchestershire, lemon juice and soy for an hour or so, and grill until the tops get crispy. Eggplant is also great on the grill. Just coat with olive oil, salt and pepper and grill till tender. Top it with mozzerella and eat as is or on a burger bun.

If you're feeling more adventurous, roast brussel sprouts in the oven with olive oil, salt and pepper. They get really crispy, kind of like french fries.

One of my favorite quick meals is a big 'chik'n' salad.

Use whatever veggies you like - I love mixed baby greens, carrot, avocado, red bell pepper, tomatoes, cucumber, walnuts and croutons and Annie Godess dressing. Then I cook and chop up a Boca chik'n patty, put it on top and you have a wonderful quick and simple meal that is filling and healthy!!

Or what about tostados or tacos? - Fill them with refried beans, Spanish rice, guacamole, tomatoes, lettuce and soy cheese.
Another easy dinner.

Learn to cook, and then help your mother. There are plenty of recipes on the Internet. I'm sure that you're more than sufficiently Internet savvy to find some that meet your specifications.

Make a broccoli quiche, or a veggie lasagne. Go to the food network to find the recipes.

If you like Chinese food you could try to convince her to get take-out more often! Most Chinese dishes are inexpensive and full of veggies in tasty sauces, and there's such a variety- ususally something for everyone.
