Squash casserole with tofu--completely vegetarian and delicious:

4 yellow crookneck squash cut in 3/4" (about) sized chunks and steam (or boil)-about 8 min.
1 bell pepper chopped
1 red onion chopped
2 cans whole tomatoes, drain off the juice and dice the tomatoes
1 cup dry spiral whole wheat pasta--cook in boiling water 10 minutes
2 cloves garlic, chopped finely
I pkg firm tofu, diced into 3/4" cubes (if possible get one of the small tightly wrapped packages of Tofu--not one of the big containers where the tofu sits in water).
2 tbs extra virgin olive oil
3 tablespoons brown sugar
dash of salt and papper
tablespoon dried basil
1 tub of grated parmesan (the kind found in the refrigerated cheese section of the grocery store-if you are vegan--no dairy, then a vegan cheese substitute can be found but the taste is very inferior).

As the pasta is boiling,
steam the squash.
Preheat oven to 395 degrees-
Saute garlic, onions and bell pepper in a skillet with 2 tbs. olive oil--5 minutes. Add tomatoes and tofu cubes. Cook 4 minutes. Mix cooked pasta, steamed squash, and tomato sauce mixture in a large salad bowl and add basil, brown sugar, salt and pepper and 1/3 of the parmesan.
Mix together and spoon into large oiled glass lasagna baking dish. Sprinkle all remaining parmesan in an even layer, covering over the food and bake for 30 min.

Half hour to 45 minute dinner! And very yummy!! (If you don't have couscous, use whole grain instant rice, less expensive too; and if you don't eat cheese then skip it or use soy-based, you won't notice the difference.) This serves 4; cut the recipe for 2 or even 1 and you're not only cutting cost, but time too!! (It's all about time-saving...)

Stuffed Tomatoes:

4 large tomatoes
1 1/2 cups vegetable broth
1/2 cup sun-dried tomatoes, chopped
1 cup couscous
1/4 cup shredded nonfat mozzarella cheese
1/4 cup chopped fresh basil
2 tablespoons minced fresh mint leaves
1/4 teaspoon ground black pepper
DIRECTIONS
Preheat oven to 375 degrees F (190 degree C).
Cut the fresh tomatoes crosswise in half and scoop out the pulp; set aside. Invert the tomato shells on paper towels to drain.
In a small saucepan, bring the broth and sun-dried tomatoes to a boil. Remove the saucepan from heat and stir in the couscous. Cover and let stand for 5 minutes.
Stir in the cheese, basil, mint and pepper. Then gently stir in the tomato pulp.
Place the tomato shells in an 11x7 inch baking dish. Spoon the couscous mixture into the shells, pressing the mixture firmly into the shells. Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes or until heated through.

Don't listen to the guy above me....vegan is the healthiest life style you adopt. Animal Fats are bad for you and can cause heart desease. Humans are not designed to eat animals. You just have too really make sure you get enough protein from other sources. Like Soy, Nuts, Seeds, Beans, Cheese (if your not vegan). It's not an easy thing to do but nothing worth doing is ever easy. IF you stop eating meat for a month i promise you will start to lose a taste for it. You feel more energetic adn your ksin and hair will look better as long as you are getting all your nutrients. I'm not perfect by all means but i have cut out red meat completely for the past 10 years. You should just faze it out...start with red meat, then chicken and turkey,....then decide if you want to go vegan. Also make sure you are getting enough Omega Fatty Acids.

This is a favorite with the kids in my house
Macaroni & Peas, it is tasty, simple and super cheap...
1 tbs olive oil
1 can tomato sauce
1 can of peas (baby peas)
1 med onion minced
1 lb ditalini or elbow macaroni (whole wheat is best)
pepper & parmesian cheese to taste

Boil Pasta untill done

Sautee minced onions in olive oil untill they are translucent, add tomato sauce, peas-liquid & all, and cooked pasta bring to a simmer, season with parm cheese & pepper.

Serve in soup bowls with salad & crusty bread

or tempeh rubens

1 package tempeh cut into 2 squares then split down the middle (making 4 thin squares)
4 slices swiss cheese
4 TBS saurkraut
8 slices of rye bread
nayonaise or miracle whip

preheat broiler on oven
place 4 slices of rye bread on the broiler pan, add a square of tempeh to each slice
broil for 2-3 minutes
add saurkraut & cheese broil another 2 minutes or until the cheese is melted, place the the last 4 slices of rye bread in the toaster, spread nayonaise or miracle whip on the toasted slices, finsih the sandwiches serve with fresh fruit, or a green salad

fried tofu
drain & press the liquid out of a lb of extra firm tofu slice into 8, return to packaging or ziploc bag, add 1/2 cup good seasons or other italian salad dressing, marinate 15 minutes, while marinating make a green salad
fry tofu in a fry pan or a grill pan untill golden on both sides, serve over salad.

another favorite is tofu pups and bushs vegetarian baked beans with yellow mustard...
cook tofu pups according to package directions, cook beans acording to package directions, serve with steamed or grilled veggies, or salad.

A Salad and vegeterian vegetable soup sounds good to me.
Campbells vegeterian vegetable soup is pretty good too.
Don't know if you eat cheese , if you do a grilled cheese sandwich could replace the soup.
