Just stop eating meat and meat by-products. When dining out, many restaurants will offer vegetarian dishes (including fish, salads and pasta). If you don't see anything appropriate on the menu, just ask. The kitchen may or may not be able to prepare this for you, but at least you have alerted them of differentiating food tastes and preferences. You could check with your local bookstore ... many such retailers will carry "vegetarian" cookbooks for sale.

Head to the Vegetarian Society website (link below). Full of great information and loads of recipes.
Eating out should be no problem. There are very few places in the world I have visited where there are less than maybe 2 vegetarian options on the menu, in any type of restaurant (yes, even in a steakhouse I was once forced to go into).

If you dine out frequently, you might want to try cooking at home more often. If nothing else, there are some great vegetarian dishes you could be missing out on.

A lot of restaurants serve things like veggie burgers these days. Or you could just opt for a salad. Go to http://www.veggielife.com/restaurants.aspx and see if there are any vegetarian or vegan restaurants in your area.

First try to read this book instead of gathering information here and there on the web which is time consuming.

Try to get familiar with vegetarian cooking and all the meat substitues that are available at the supermarket. Try to get familiar with tofu... So that your transition is smooth.
When you go to regular restaurants you can always ask them to make you a special dish and most regular restaurants do offer a veggie options.
Most veggie friendly cuisine is:
Thai, Chinease, Indian, Mexican, Middle Eastern and Italian.
If you like to eat at restaurants know that most cities have a great selection of vegetarian restaurants. The food at the veggie restaurants. Even non vegetarians go to those places. Look the restaurants up at:

Good luck

Grab some literature. Your local library should have tons of good stuff. Also, educate yourself on the less obvious flesh products in your diet, like gelatin/ rennet or pepsin processed cheese/ isinglass processed alcohol etc.

As for cutting stuff out of your diet, do what you can. Obviously, quiting flesh immediately is best, but If you can't hack that don't get discouraged and try a more gradual approach. Be wary of plateau'ing though, keep your eyes on the goal! (Which, hopefully, is veganism)

It's easy to take steps. First get rid of red meats, then poultry, then everything else (Like gelatin).

When getting rid of meat, you need to find another source of omega three and six; protein and iron.

I take a multivitamin every day, plus a protien shake that has omega three's and six's in it.

Most restaurants can make you something without meat in it, most are pretty cooperative.
And if all else fails, have a salad.

try this website. There is a list of many vegetarian and health stores around the globe. There might just be one close to you.

and i think many restaurants will be willing to cater to special request (ie no meat). otherwise, I just take my dollar to other restaurants where they appreciate it more.

easiest thing to start with...red meat
then chicken and turkey....
then fish (which is a meat).
lots of resturants sell vegetarian food...not only salads...like at Unos they have a great veggie pizza (i order it vegan), and Applebees and cheese sticks and even fast food, like fies from BurgerKing (which are Vegan) and Subway minus the meat.
