Gazpacho originated in southern Spain...and is a soup...although often thought of as a salad.
Gazpacho can, therefore, be a first course for any meal. It is definitely summer fare...and should be served with lighter entrés typical for the summer season. Fish, pasta, chicken or eggs come most easily to my mind.

gazpacho is a nice summer soup, which would go nicely with some grilled fish fillets, shrimp, or other rustic seafood dish. you should serve bread as well.

bread and cheese always round out a soup, But for a more exciting flair and some protein I'd have tortilla chips and a spicy bean dip.

I would serve seafood - maybe grilled or broiled salmon, or shrimp. If not I think I would go totally vegetarian.
