Norah Jones (not instrumental, but...so mellow) I guess there's always Kenny G.... you may try some of the jazz music as well: Harry Connick Jr. or Wynton Marsalis. Also Yoyo Ma.

Hire a jazz band - even a jazz duo or trio would sound great. ie piano, double bass and sax for example.
It's easy listening, but it's also funky and they can play jazz which is upbeat or mellow, whatever suits your taste.
They are always great to watch, but at the same time the music is unimposing and works great as background music for those who do want to chat.

the best dinner music at a wedding is Frank Sinatra/Dean Martin type music. That's what I had at mine and everyone loved it!
