estrella ( STAR ),you ask: "Mexican food?".Well here is the answer: Do you mean REAL mexican food or the commercial variety like is bought at fast food places and some restaurants? There is a BIG difference,some original home cooked meals cannot even be compared to that stuff you can buy at the drive-thru.True mexican recipies are flavorful,satisfying and delicious where-as that stuff you buy at the fast food place are just pacifiers of the munchies!

Batatas Con Huevos -- Mexican Comfort Food:

55 min 20 min prep
4 servings

2 large red potatoes
1 cup spinach leaves, wilted
4 whole raw eggs
salt and pepper
1 cup grated cheese
Salsa
1 cup tomatoes, chopped
1 jalapeno pepper, deseeded and chopped
1/4 cup chopped onions
4 sprigs cilantro, minced
4 sprigs basil, minced
2 teaspoons lemon juice
salt and pepper

1. Preheat the oven to 350 degrees F.
2. Poke the potatoes all over with a fork and nuke in the microwave for 15 minutes.
3. Alternatively, you can bake them in the oven for 1 hour.
4. Let cool until you can handle them with your bare hands.
5. Trust me on this one, you don't want to be playing hot potato.
6. Cut each potato in half.
7. Pare off a tiny sliver of what will become the bottom of your potato, so it can stand on its own and not roll around.
8. Scoop out the flesh and leave just a small layer of potato around the shell.
9. Use the scooped out potato to make mashed potato, or save for another use, but you're not going to need it for this recipe.
10. Line the 4 potato shells with the wilted spinach leaves.
11. Crack each egg into a potato shell.
12. Make sure the yolk doesn't break (you may want to crack the egg into a cup first and then gently pour it into the potato.
13. Season with salt and pepper to taste.
14. Top with grated cheese.
15. Place the potatoes on a baking sheet (good idea to line it first with parchment paper).
16. Bake in the oven until the eggs are set and the cheese is melted (about 20 minutes).
17. In the meantime, make the salsa by combining all the ingredients.
18. You can make it as chunky or as smooth as you like.
19. Serve the potatoes with some salsa on the side.

I love Mexican food!!!!! I have been missing it ever since I moved from Southern Cali to Minnesota....but luckily I found a place last week that is really good

Chiles Poblanos

8 green poblano chiles
Oil
1 pound Monterey jack cheese
Salt
Pepper
1/2 cup all-purpose flour
4 eggs, separated
Chiles rellenos sauce

Wash and dry green chiles. Dry them well. Place chiles in hot oil in skillet and allow to fry about 1 to 2 minutes until a light brown color. You will see them blister as they cook. Fry on both sides and remove from oil. Peel under cold running water, trying to keep the stems on. Cut a slit on one side of each chile and remove seeds carefully so that peppers don't tear.

Cut cheese sticks about 4 inches long to push through the slits. Stuff each chile with one cheese stick, dry with paper towels, sprinkle with salt and pepper, and roll in flour. Set aside and prepare egg mixture.

Beat egg whites in a medium-size bowl until stiff, like meringue. Add beaten egg yolks, folding and mixing lightly so as not to disturb the lightness of egg whites. Season egg mixture very lightly with salt and pepper.

Heat about 1/2 inch oil in a large skillet. Dip each floured chile in the egg mixture until well covered and fry in hot oil as you would fritters, turning once. They should be a light golden color.

Its all about the carne asada tacos! There is this sweet rice pudding stuff, forget the name of it, but a girl I use to know (we worked together) use to have it....dang can not remember the name of it...do you know what I am talkin about?
