what triggers this -i know they are just dormant in body but why now? i eat healthy,not stressed at all....

Any sort of physical or mental stress and/or trauma, as well as eating/not eating certain foods has been linked to triggering outbreaks. Its also been suggested that upper respiratory infections can trigger oral outbreaks hence the terms "fever blister" and "cold sore". The evidence for such triggers have been documented but much of it is based on conjecture so no one can answer this verifiably or beyond supposition.
