MANCHU WOK Chow Mein recipe
Yield: 1 serving
Ingredients:
1 tablespoon vegetable oil
2 scallions, trimmed, and cut crosswise into 1/2-inch thick pieces
1 1/2 cups sliced Napa cabbage
1/4 cup sliced celery
1/4 cup bean sprouts
1/4 teaspoon granulated sugar
1/2 cup chicken broth
1/2 tablespoon soy sauce
1 teaspoon Oriental sesame oil
1/2 tablespoon cornstarch, dissolved in 1 tablespoon cold water
Red pepper flakes, to taste
1/4 pound cooked vermicelli noodles
METHOD:
In a large heavy skillet heat the vegetable oil until it is hot but not smoking and in it stir-fry the scallions, cabbage, celery and bean sprouts for 3 minutes, or until the cabbage is wilted. Add the sugar, broth, soy sauce, and sesame oil and simmer the mixture, covered, for 3 minutes. Stir the cornstarch mixture, stir it into the vegetable mixture, and bring the liquid to a boil. Season to taste with red pepper flakes. Simmer until heated through and serve over noodles.

Chinese Shrimp Noodles Ingredients: 1 1/2 tsp salt, or to taste high stock or hotbed leek sauce (see below) 4 1/2 cups (500 g) flour, sifted 5 oz (150 g) shrimp, shelled and deveined 4 egg whites Directions: 1. Mince the shrimp into a pulp and mix with the egg whites, salt, and flour. Add enough water to knead a smooth, elastic dough. Roll out into a very thin sheet and fold into 3 layers. Cut crosswise into fine noodles. 2. Heat 5 cups (1,250 ml) of water to boiling and cook uncovered until the noodles are done, about 1 1/2 minutes. 3. Serve the noodles in bowls with high stock or hotbed leek sauce, made by boiling leek, lard, oyster sauce together and thickening the sauce by adding dissolved cornflour.

This is a very popular noodle dish in Hong Kong.
<<<<<<< Stir-fried rice noodles with beef >>>>>>>
200g rice noodles (thick ones, hor fun)
120g flank steak
100g mung bean sprouts
25 g golden chives
25g onion
2 stalk of spring onion
3 tablespoon peanut oil
1 tablespoon cooking wine
Marinade for beef
1 tablespoon soy sauce (light)
a pinch of salt,
a pinch of sugar
1/2 teaspoon of cooking wine
1/2 teaspoon cornstarch
1 teaspoon water
1/2 teaspoon of oil (add at last)
Seasoning
1 tablespoon of dark soy sauce (lo chow)
1/2 teaspoon soy sauce
a pinch of Chicken powder
1) Slice beef along grain, using marinade to marinate beef for 30 minutes, lastly, add 1/2 teaspoon of oil and set aside
2) Wash golden chives and bean sprouts, drain well, cut chives into 1-inch-long sections. Shred onion and section spring onions
3) Heat wok over high heat, when you see the wok is hot enough (steam coming up) then add 3 tablespoon of peanut oil in the wok, reduce heat to medium, stir fry marinated beef quickly for 30 seconds
4) Add bean sprouts and onion, continue to stir fry quickly for 1 minute, add 1 tablespoon of cooking wine in the wok, add rice noodle, turn heat to high again, stir fry quickly for 1 minute then Sprinkle the seasoning in the wok.
5) Continue to stir fry the noodles till they are well heated, add chives and spring onions, turn off the heat, toss to combine, transfer the noodles to Manchuwok, serve hot with chili sauce (optional) Below is a photo for your reference.
