I just made a pot of this last week. and it was so good! I mixed 2 cups of cooked brown rice with 2 cans of red beans, 1 can of whole kernel corn, 2 T margarine, 1 medium diced onion, 1 medium diced green pepper, 1 large chopped tomato, 3 T tomato paste, 3 T salsa, 1 cup water, and threw in salt, pepper, garlic, cumin, and chili powder to taste. Tossed it all in a pot, cooked until the veggies were soft. Being a vegetarian, I'm always throwing things together. I think it would have been even better with some sharp cheddar melted on top. Don't listen to the guy above me....vegan is the healthiest life style you adopt. Animal Fats are bad for you and can cause heart desease. Humans are not designed to eat animals. You just have too really make sure you get enough protein from other sources. Like Soy, Nuts, Seeds, Beans, Cheese (if your not vegan). It's not an easy thing to do but nothing worth doing is ever easy. IF you stop eating meat for a month i promise you will start to lose a taste for it. You feel more energetic adn your ksin and hair will look better as long as you are getting all your nutrients. I'm not perfect by all means but i have cut out red meat completely for the past 10 years. You should just faze it out...start with red meat, then chicken and turkey,....then decide if you want to go vegan. Also make sure you are getting enough Omega Fatty Acids.

You don't have to make soy burgers! You just buy a box of them in the health food section at about any grocery store! Most of them are easily microwaved in a minute or two and don't take any pots at all. When it it done being microwaved, just put it between a bun, and desired condiments, and eat! Or find a different way to eat it that don't include buns and condiments, in you want. And the best part is, it tastes great and is much healthier than a meat burger!
And you would be surprised what else you can find in the frozen health food aisle at your grocery store! You can buy literally hundreds of different frozen veggie meals that can be prepared with just a few short minutes of microwaving! And they are all healthy! Even the 'unhealthy' ones are healthier than their real meat counterparts.
As for one-pot recipes, I don't know, but I can give you lots of vegetarian recipes.

Saute Firm tofu with onions, green pepper cook some brown rice with make pesto sauce garlic,basil,olive oil i dont use nuts in my pesto but most pesto also has pine nuts in it.Mash up some avocado ,put all ingredient in a tortilla then u have a vegan wrap u could use vegan sourcream ,i use basil,parsley,oregano to spice the veggies and sea salt.If u want extra flavor i put a can of tom sauce w/ chilli powder and cumin and a little xylitol and put in it like sasa.

I like sweet potatoes and lima beans.
Brown a sliced onion, diced tomato, and a couple cloves minced garlic in the pot with olive oil. Slice potatoes into 1/4 inch rounds and brown with other ingredients. Season with Mrs Dash Onion & Herb. Add enough water to cover and cook the potatoes til just soft and add the frozen beans. Cook gently for another half-hour and serve with a crusty baguette spread with olive oil and garlic salt.

How about making a vegetarian pie with some phylo pastry? Get a bunch of cooked vegies together, cut into whichever size you prefer, do the pot in pastry, add a sauce, cover with top pastry, prick and smear with egg, and into the over it goes until the pie looks ready! Quick and easy.
