Yeast:
Yeast is a living organism that converts its food to alcohol and carbon dioxide. It’s the carbon dioxide bubbles that make dough rise. Yeast is very sensitive, too much heat will kill it, and cold will stunt its growth. Always check the expiration date on the yeast package before using.
Most of the recipes follow the "quick-mix" method: mixing the yeast with part of the flour, then beating in very warm liquid (120° to 130°). Some recipes, however, still use the traditional method of dissolving the yeast in warm water (105° to 115°).
If you’re using quick active dry yeast, rising times may be shorter. Check the manufacturer’s directions for the best results.
For best results, be sure to use the temperatures for liquids given in each recipe.

Yes, you can put too much yeast in dinner rolls. Yeast is an ingredient just like salt or sugar that needs to be measured or else your rolls wont turn out right. Just follow the recipe and they'll be perfect! If you accidentally put too much in, then you might as well bake them and see what happens. I don't think the results would be too horrible.

Yes it is possible to overdo the quantity of yeast added to flour,dough with more yeast than needed will result in a less than perfect loaf or rolls.Proceed with the care that a living organism,which is yeast ,demands ,correct quantity ,right temperature for dough to stand & the right lenght of time all call for due attention,resulting in good rolls.
