Unagi, or eel, is prepared by grilling with a sweet glaze. The bones are very soft and edible. Don means "over rice".

It depends

It's supposed un-acceptable to have bones on Unagi-Don at fine Japanese restaurants. But since many bbq-eel products come from China and the cost fairly cheap. so some fine bones usually can be found.

Sometimes the eel has tiny edible soft bones, like you might find in some canned salmon. Don't eat if the bones are hard though :)

The chef cuts the bones into really fine pieces. I watched them do this on Iron Chef.

There are almost always some tiny little edible rib bones, but there should never be any big inedible backbones.

Only if the chef cuts the filets to close to the bones.
But then again, it won't kill you.
