There are plenty of places you can buy it. Hy-Vee food stores generally carry saffron (all of them in Cedar Rapids do), but where they keep it varies from store to store. Usually it is in the spice aisle, in little bags. However, I have seen a couple where it is actually kept in a little rack near the Chinese and/or Italian deli sections.
Additionally, most middle-eastern grocery stores and natural food co-ops carry saffron.
If you can not find it anywhere else, I can guarantee you that it is available at the Hy-Vee's in Cedar Rapids and Iowa City, as well as at New Pioneer Co-op in Iowa City and Aladdin restaurant/grocery in Coralville and Cedar Rapids.
You can always grow your own too. Saffron crocuses do well in Iowa, given enough drainage. I grow my own, but I often fail to catch them when they bloom (which is usually November here, sometimes there is snow on the ground).

Go to ethnic grocery stores--Indian or Middle eastern stores--they should have it as it is used in tea and sweet desserts and sometimes in rice and other dishes--or try an Italian store--saffron risotto is delicious...Otherwise-you could order it over the internet--Spain has good saffron

I know Des Moines, Iowa City, and Fairfield will definitely have it--are you willing or wanting to make a trip to get it?
You can also order it online. I have ordered from this company before: https://www.penzeys.com
They have high quality products.
You could get it shipped to you for about $13.00--20% of that is for shipping, so it would be worth your while to order a few more spices you want.

You could try your local grocery store. I saw saffron at my local Safeway just the other day. If not, try a specialty foods store.

Penzeys! They have a lot of locations in that part of the country or you can order online. Check the website below for locations and to browse through their catalog.
Be careful...they are addictive!
