I like the instant couscous (Near East makes it in a variety of flavors).
Simple Moroccan Couscous
Bring 1 and 1/4 cups water, 1 cup chicken broth, 1 tbsp. vegetable oil, 11/2 tsp. grated lemon zest, and 1/2 tsp. salt to a boil.
Add 10-oz. box couscous, remove from heat, cover, and let stand 5 minutes. Fluff the couscous with a fork; add 19-oz. can rinsed canned chickpeas and 1 cup raisins. Toss. Serves 4.

Already cooked couscous is as wide open as rice. Some of the people of Tunisia put honey and pine nuts in it. My dad always put diced lamb and mint in it along with garlic etc. Sometimes if we are eating arabic foods I just like it plain.

I add a little chicken boullion in the water when I cook and add parmesean cheese when done.

i like to prepare it using chicken broth and butter. substitute the broth for the water amount given on the package. serve it with your favorite chicken dish. along with green beans
