Easy Split Pea Soup is one of our favorites:

6 cups vegetable broth (I use homemade, but canned can be used)
5 carrots, diced
1-1/2 to 1-3/4 cups green split peas
3 medium onions, diced
1 large clove garlic, minced

Place all ingredients in medium crockpot. Cook on low about 6-8 hours. Or you can use a stockpot to cook the soup, simmering for 1 hour to 1-1/4 hours. This recipe is based on a Weight Watchers Versatile Vegetarian cookbook recipe, and is delicious!

I eat a lot of beans and rice. Often times I make a burrito and pack it with refried beans, Mexican rice, jalapenos and hot sauce. I can whip up a nice hot bean burrito in about 2 minutes.

Another favorite is meatless chili. I take a jar of Tabasco Chili Recipe and add a can of chili beans and a little bit of beer. This one takes about 5 minutes.

There are also many types of pasta dishes that you can make that are easy, quick and tasty. Pasta dishes typically take about 10 minutes depending upon how you cook it.

Make a quick and easy taco salad with lettuce, kidney and/or black beans (I get low sodium), diced tomatoes, a tiny bit of mozzerella if you want and top it off with a dab of sour cream (low fat or fat free if you wish) and some hot sauce. Yummy!

If you want you can crush up a few organic blue chips to top it off. :o)

Also, you can take the mixture, minus the blue chips and wrap it up in a whole wheat tortilla.

I'm a bachelor and have been making simple veg sandwiches with WW bread, avocado, tomatoes, onions and romaine lettuce. A few sunflower seeds are optional.

Come to think of it, I might try adding sprouts.

Sure I know lots but I don't know what you consider easy. Eat rice, steamed veggies and some form of protein thats about it.
