Sometimes I just break it up and eat it with yogurt, but does anyone have other suggestions?

stale injera is made into a sort of salad, with tomatoes, chillies...

INJERA SALAD

2 pieces leftover injera (Ethiopian flatbread)

Kraft Zesty Italian salad dressing (you can be a purist and use olive oil and wine vinegar, but I swear to God my favorite Ethiopian place used to use this stuff)

1 large ripe tomato (no hothouse softballs), diced, or 15 sweet cherry tomatoes

3 fresh jalapeno peppers, slivered

Tear the injera into small pieces and place in a bowl. Moisten liberally with dressing or oil and vinegar (if using the latter, add a pinch or two of salt and a few grinds of pepper). Add tomatoes and jalapenos. Mix well. Cover bowl with plastic wrap and let sit for at least an hour.

I would use it like a saltine cracker where you can top it with different items... cream cheese.

Break it up into crumbs and use it as a coating for deep frying.

And you're using it as a dessert topping. Have you tried it with a little honey?
