and I thought it would add to the rainbow of colors on my kabobs. Also, is it even better to marinate (peppers, eggplant, mushrooms, tomato, onion, zuchinni, tofu) OVERnight than just the two hours in my recipe? Is it important to marinate in the fridge instead of room temperature? Thanks!

I like it with the skin.

Marinate overnight for more intense flavor and yes, marinate in the fridge...

Food at room temperature is a breeding ground for bacteria.

I useto dislike fried or baked eggplant but I have found different ways to use it. U can fry it with Habenaro or Jalepeno and that hotness of those peppers will get rid of
the objectional tastes. I also use it as a filler when making apple pie and adding apple juice or lemon juice. When doing this 4/5 apples 1/5 eggplant. No one seems to be able to tell than eggplant is even in it! Sliced raw egg plant is good in amongst a cheese and onion sandwich. The eggplant skin part is harmless and has more vitamins than the innards! I also recently found a recipe where eggplant can be used to make fake fish! I have to try it before I tell the details about that recipe! The recipe is by Betty !

Being Greek I have never met anyone who would peel an eggplant except when it is charred in the oven.
When I marinate something I usually put it in the fridge. It depends on the time..if you marinate something quick, you can also leave it out at room temperature up to an hour.

Eggplant is best eaten with the pretty purple skin on. Most of the nutrients are in the skin.

Marinating the eggplant for too long will cause it to lose water and shape.

Eggplant is lovely, but can be a bit bitter. The best way to counteract that, is to slice it, salt it with sea salt, let it sit a few minutes, then rinse. It is terrific on kababs. If you overmarinate eggplant, it will get mushy

i think eggplant is a whole lot better skinned, breaded, and fried.

You can eat it with the skin and it does taste good once its prepared well.
