Is this a correct composition?

On the day we usually eat a special boiled food called okokbab made of five kinds of
grains:rice,glutinous rice, soybean, red-bean,
and foxtail millet.

** how is rice a different grain from glutinous rice?

** soybeans & red beans are not grains, they are beans!


PS: this dish is not Indian, I am guessing maybe Korean?

Its pretty correct but this is what i would change it to if i were you-

On the day we usually eat a special food which is boiled, called okokbab. It is made from five kinds of grains including rice, glutinous rice, soybean, red-bean, and foxtail millet.

I'm not a Native English speaker, but 'boiled food' sound weird to me. I think I would say - "We eat special food called okokbab, which is made of five kinds of
grains:rice,glutinous rice, soybean, red-bean,
and foxtail millet boiled together.' Or something like that...
And I also think you don't need an 'a' before 'special food'.

A basic guideline for writing is that one ugly long sentence can always be improved by making two short sentences out of it.
On- name the specific day using a proper noun- we will usually eat a special boiled dish called Okokbab. Okokbab is made from glutinous rice , long grain rice[change as needed] soy beans , red beans and foxtail millet.

On the day..do you mean during day time or "for lunch"? Go for "a special ( or typical) cooked dish that consists of five different ingredients..." :)
