Chai Tea
14 cardamom pods
4 1/2 cups water
1 1/2 cups milk
3 (3-inch) sticks of cinnamon, broken into pieces
6 whole cloves
2 tablespoons black tea leaves
Granulated sugar to sweeten as desired
Using the flat side of large knife, crush cardamom pods to expose seeds.
In saucepan, bring water, milk, cardamom pods, cinnamon and cloves to boil. Reduce heat and simmer for 5 minutes, stirring occasionally.
Add tea leaves and remove from heat; cover and let steep for 5 minutes. Strain and serve hot. Sweeten with sugar as desired.
Makes 6 servings.

Take regular Lipton tea bags, boil 1 bag for each person and put a teacup amount of water in, per tea bag. Along with this, you add in a stick of cinnamon (about an inch long), green cardamom (2-3). When it comes to a rolling boil, add evaporated milk or half n half or even whole milk. Enough to give the tea a camel color. Boil for another few minutes until there becomes a skin on top. Serve with sugar and enjoy! You can use all or some of the spices. This is just how my husband prefers. I have had many compliments on this one. Other spices you can use could be allspice, nutmeg, or cloves. Just make sure one doesn't overpower the other. I hope this helps!

Traditionally, Masala Chai is a bracing, strongly spiced beverage brewed with so-called "warm" spices. Most masala chai incorporates one or more of the following: cardamom, cinnamon, ginger, star anise, peppercorn, and cloves. Other possible ingredients include Nutmeg, chocolate, cocoa, vanilla , licorice or saffron.
Chai can be prepared in many ways. The most common way is to boil water with the sugar and spices, add tea and milk/creamer and then proceed to simmer it for a few minutes. It is then strained and served.
The green tea-based Kashmiri version of chai is brewed with almonds, cinnamon, black pepper, cardamom, and sometimes saffron. Many Western commercial preparations such as Oregon Chai are strongly flavored with vanilla and honey, with other flavors far less dominant. This results in a far mellower, "cozier" beverage than most Indian masala chais, with a markedly different flavor.

The most basic masala chai contains cinnamon, cloves, cardammon, and sometimes ginger. To make traditional masala chai, these dried spices mixed with black tea(Uba, Keyman, etc), some sugar, brewed directly in a pan with milk.
